The best spinach and cheese puff pastry appetizer recipe
I have spring fever for the best spinach and cheese puff pastry appetizer recipe. You have to try these tempting spinach and cheese puff pastry pinwheels three ways! These appetizers look like they're difficult to make...but they're not. They feature spinach, onion and cheese filling that is simply rolled up in flaky puff pastry and sliced into pinwheels.
For a flavor twist, try the Pesto or Ham & Broccoli fillings below or a different cheese. Any shredded cheese will work in this recipe. Or experiment with your favorite fillings and ingredients. Puff Pastry Spinach, Onion and Cheese pinwheels
Ingredients
1 egg
1 tablespoon water
1/2 cup shredded Muenster cheese or mozzarella cheese
1/4 cup grated Parmesan cheese
1 green onion, chopped (about 2 tablespoons)
1/7 teaspoon garlic powder
2 tablespoons all-purpose flour
1/2 package of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets(1 sheet), thawed
1 package (about 10 ounces) frozen chopped spinach, thawed and well-drained
Directions
Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork.
Stir the Muenster cheese, Parmesan cheese, onion, and garlic powder in a medium bowl.
Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Brush the pastry sheet with the egg mixture. Top with the cheese mixture and spinach. Starting at a short side, roll up like a jelly roll. Cut into about 20 (1/2-inch) slices. Place the slices, cut-side down, onto 2 baking sheets. Brush the slices with the egg mixture.
Bake for 15 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.
For best results, make sure to remove as much liquid as you can from the spinach before adding it to the pastry. If it's too wet, it may make the pastry soggy.
For Pesto Swirls, omit all ingredients but the flour and the puff pastry. Unfold the pastry sheet as directed above. Spread 1/2 of an 8-ounce package cream cheese, softened, on the pastry sheet to within 1/2 inch of the edge. Top with 3 tablespoons pesto sauce and sprinkle with 1/4 cup finely chopped walnuts. Brush the edge of the pastry sheet with water. Roll up the pastry and proceed as directed above.
For Ham & Broccoli Swirls, omit the spinach, cheeses, onion and garlic powder. Unfold the pastry sheet and brush with the egg mixture as directed above. Spread 1/2 of an 8-ounce container whipped cream cheese with chives on the pastry sheet. Top with 1 cup frozen chopped broccoli, thawed and well drained and 1 cup finely chopped cooked ham. Proceed as directed above.

Spinach & Feta Galette: Spanakopita in Puff Pastry

Ingredients
1 sheet (500g) puff pastry, thawed
1 pound baby spinach leaves
3-4 tablespoons olive oil
3-4 scallions, thinly sliced
3 garlic cloves, grated
salt, to taste
freshly cracked black pepper, to taste
8 oz (230g) cream cheese, softened
6 oz (170g) feta cheese
3 oz (90g) gouda cheese, shredded
egg wash: 1 yolk plus 2-3 tablespoons milk
Instructions
Preheat the oven to 400 °F, 200 °C.
Make the Spinach Filling:
Heat a large pan over medium-heat. Add the oil and scallions and a pinch of salt. Cook the scallions until softened.
Add the garlic and warm through for a few seconds until fragrant.
Add the spinach leaves in a few batches. Increase the heat to medium-high and season each batch with salt and pepper. The high heat will help the liquid thatthe spinach releases evapotrate. Once each batch wilts add the next until all of the spinach has cooked and wilted.
Remove the pan from the heat and add the cream cheese. Mix together until incorporated. Crumble the feta cheese into the mixture, mix together and taste. Season with salt and pepper if needed. Add a teaspoon of dried dill if desired. Allow the filling to cool to room temperature.
Assemble the Galette:
Lighty dust some flour over your work surface. Roll out the pastry to be 14-inches round (see video).
Dock the pastry with a fork and transfer to a baking tray lined with parchment paper.
Spread the filling over the pastry leaving a 2-inch border.
Fold the edges of the pastry over to create a crust.
Combine the egg wash ingredients together and whisk until smooth. Brush the egg wash over the crust.
Sprinkle the gouda cheese over the spinach filling.
Bake on the center rack of the preheated oven for 25-35 minutes.

Spinach Puffs
Ingredients
1 9-ounce package frozen chopped spinach, thawed
1/2 cup crumbled feta
1/4 cup minced onion
1 tablespoon olive oil
1 teaspoon chopped dill
1 teaspoon minced garlic
Kosher salt and freshly ground black pepper
2 large eggs
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed, rolled out to a 12-inch square,
kept chilled
Instructions
Preheat oven to 400°.
Using your hands, squeeze spinach until dry, forcing out as much water as possible.
Mix spinach and next 5 ingredients in a medium bowl. Season to taste with salt and pepper. In
a small bowl, beat 1 egg to blend; fold into spinach mixture.
Cut puff pastry into 3 equal strips. Cut each strip into 2 squares for a total of 6. Place a square
in each muffin cup, pressing into bottom and up sides and leaving corners pointing up.
Divide filling among cups. Fold pastry over filling, pressing corners together to meet in center.
Beat remaining egg to blend in a small bowl. Brush pastry with egg wash. Bake until pastry is
golden brown and puffed, about 25 minutes. Transfer to a wire rack; let puffs cool in pan for 10
minutes.

Spinach Cheese Puffs Makes 9 to 12
Ingredients:
FOR THE PUFF PASTRY
All purpose flour – 2 cups + 1/3 cup
Chilled Butter (unsalted) – 250g
Salt – a large pinch
Chilled water – ½ cup (or slightly more)
Synthetic vinegar – a few drops
FOR THE FILLING
Blanched spinach leaves (roughly chopped) – 1 cup
Paneer/Cottage Cheese – 200g
Mozzarella and Processed cheese (grated) – ¾ cup
Onion (sliced) – 1 large
Capsicum (chopped finely) – 1 tblsp
Garlic (grated) – 1 tsp
Spices(nutmeg – a pinch, red chili flakes and pepper powder to taste)
Salt – to taste
Extra virgin olive oil – 1 ½ tblsp
