How To make Spinach (Korean Sigumchi Namul)
1 lb Fresh spinach
3 tb Soy sauce
2 tb Sesame oil
1 tb Sesame seeds
1 ea Clove garlic, crushed
1 tb Sugar
1 tb White vinegar
Dash pepper 1. Wash the spinach. Steam until just tender and still green. Strain and
squeeze out as much water as possible. Cut spinach very coarsely. 2. Combine the soy sauce, sesame oil, sesame seeds, garlic, sugar, vinegar

Sigeumchi namul (시금치나물) is a popular Korean banchan or side dish also known as seasoned spinach or Korean spinach salad.
It’s made with blanched spinach seasoned with common Korean ingredients like soy sauce, garlic, sesame oil and sesame seeds.
Sigeumchi namul is often served alongside bibimbap rice bowls, stirred through chapchae noodles or rolled up into kimbap / gimbap (Korean style rolled sushi).

Sigeumchi-Namul | Korean Spinach Side Dish | AAPI + Mental Health Month
Having trouble adding more dark leafy greens to your diet and need more good mood food in your life? Sigeumchi-Namul, a Korean Spinach Side Dish to the rescue. This dish celebrates both AAPI and Mental Health Awareness Month.
I adapted this recipe from Maangchi, YouTube's quintessential Korean Mother-In-Law!

Quick Sigeumchi-Namul Recipe:
Total Servings: 4
Serving size: 1/4 cup
Ingredients:
8 ounces super greens (already triple washed and perfect size)
1 garlic clove, minced
1 green onion, chopped
3/4 tablespoon soy sauce or tamari if gluten-free
1 tablespoon toasted sesame oil
1 teaspoon toasted sesame seeds (store-bought is fine)
Directions:
1. Blanch your greens by bringing a large pot of water to a boil, adding the greens for 1 minute, make sure to gently submerge the greens in the hot water.
2. While greens are blanching, quickly prepare ice bath (large bowl filled with ice and water).
3. Using a large slotted spoon, take the greens out of the hot water and place them in the ice bath, make sure to gently submerge the greens in the cold water. This will stop the cooking process.
4. In a separate bowl, add garlic clove, green onions, soy sauce and sesame oil, stir well.
5. Using your hands, take one bunch of greens at a time and gently squeeze the water out and place greens in a bowl, repeat until all greens have been gently squeezed.
6. Add the seasoning and gently massage it into the greens with clean hands
7. Top the greens with toasted sesame seeds, serve cold or room temp.
