How To make Spicy Hot Italian Sausage
3 lb Pork, butt
3/4 lb Pork, fat
1 tb Garlic, minced
4 ts Salt, kosher
2 tb Fennel, seed
1 ts Pepper, cayenne
1 tb Pepper, red, dried, flakes
2 ts Pepper,black, freshly ground
1/4 c Water, cold
Casings, medium, hog Combine pork, fat, and all other ingredients except water casings in a large bowl. Grind through a 3/8 inch plate. Moisten water and mix until well blended. Stuff into medium hog casings tie at 5 inch intervals. (From, Hot Links and Country Flavors, Bruce Aidells and s Kelly, Knopf 1990)

Italian sausage is ground pork often flavored with garlic and fennel seed. It comes in two different styles, sweet or hot. Hot Italian sausage usually is flavored with spicy red pepper, while the sweet version has no pepper in it. In addition, Italian sausage is a very popular pizza topping in coarse loose chunks or sliced links.
Every holiday we celebrate seems to have Italian sausage as one of the items served. Whether in a sauce or grilled and served on a bun, it’s a very popular cased protein. My recipe is a balanced approach to the sweet and hot version with ingredients that complement each other and provide a lot of flavors.

Ingredients for this recipe:
• 15 to 18 feet natural hog casing
• 9 pounds bone-in pork shoulder
• 2 tablespoons fennel seeds
• 2 teaspoons coriander seeds
• 1 tablespoon dry basil
• 1 tablespoon dry oregano
• ½ teaspoon ground nutmeg
• 1 teaspoon red pepper flakes
• 3 tablespoons sea salt
• 2 teaspoons black pepper
• 1 tablespoon Paprika
• 2 tablespoons grated garlic
• Zest of 1 orange
• 1/2 cup white wine
• 1/3 cup chopped Parsley
• 1 1/2 cups crushed shaved ice

70%-75% lean pork
25%-30% pork fat
1.8% kosher salt
0.3% oregano
0.3% dried basil
0.2% italian spice mix (optional)

0.2% anise seed
0.7% granulated garlic
0.7% paprika
0.5% red pepper flakes
0.35% black pepper
0.2% dried parsley

SECRET SPICY ITALIAN SAUSAGE RAGU RECIPE
This Spicy Italian sausage ragu is flavored with pancetta, onions, red wine, plum tomatoes, and Calabrian chili paste. It's a super hearty ragu that needs a heavy pasta to hold up to the sauce. I used mafaldine pasta which is basically long and thin lasagna pieces. If you can't find it, use a heavy pasta like fettuccine, pappardelle, or rigatoni. SPICY ITALIAN SAUSAGE RAGU
Ingredients
-1 pound pasta - mafaldine, pappardelle, rigatoni, etc...
1.5 to 2 pounds spicy Italian sausage - casing removed
-6 ounces pancetta - diced
-1 onion - diced
-28 ounces plum tomatoes - hand crushed or blender pulsed
-3 ounces tomato paste
-1 cup dry red wine - Chianti, Valpolicella, Cabernet, etc...
-1/4 teaspoon red chili flakes
-1 teaspoon Calabrian chili paste - optional
-2 tablespoons olive oil
-grated Pecorino Romano or Parmigiano Reggiano
-salt to taste
Instructions
1. In a Dutch oven or heavy bottom pot, sautee the pancetta in 2 tablespoons of olive oil over medium-low heat until crisp. (about 10-12 minutes)
2. Add the sausage into the pan and continue to cook for 10-15 more minutes. Break up the sausage with a wooden spoon. Add in the red chili flakes and/or the Calabrian chili paste if using.
3. Add in the onions and cook for 5 more minutes then add in the red wine, turn heat to high and cook for 3 minutes. Using the wooden spoon scrape the bottom of the pan to dislodge any brown bits.
4. To the pan add in the tomato paste, cook for 3 minutes, then add in the crushed plum tomatoes. Bring the ragu to a simmer. Keep the lid slightly ajar.
5. Taste test the ragu and make any final adjustments to salt and pepper levels.
6. Toss the ragu with al dente pasta and serve with grated cheese. Enjoy!
NOTE: If finishing the pasta in a pan, cook the pasta to very al dente, then finish in the pan over medium heat. If tossing in a bowl cook the pasta until done, then toss. Either way reserve a bit of pasta water to loosen the sauce if required by adding a couple ounces of pasta water at a time.
