Spiced Apple Pie Recipe
This richly spiced Apple Pie served with a brandy creme Anglaise from the fall chapter of MY BOOK is a delicious celebration of autumn. The crisp butter crust is spiced with cinnamon and spiked with apple brandy. And those leaves look so impressive but are beyond easy! I have ALL my favorite spices in this pie and while you can use any of your favorite baking apples I would suggest you use some soft ones to really get that lovely play of textures with the pie and pourable custard. cake makes me happy and I hope it makes you happy too! I made this cake with what I had at home in the fridge. I'll be making more recipes during these strange times as requested :D
You can also add fruit like carrots, bananas in quantity replacements if that's all you have and it should be alright!

RECIPE
2 + 1/2 cups of plain flour
1 + 1/2 cup brown sugar
Pinch of salt
1 tsp cinnamon
1 + 1/2 tsp baking soda
240ml plant based milk
90ml vegetable oil
1 tsp of vanilla extract
1 tbsp vinegar or lemon juice
1/4 cup of unsweetened apple puree
2 apples peeled and finely chopped
Topping
Icing sugar mixed with blood orange topped with crushed pistachio nuts
METHOD
Pre heat oven to 180 degrees c.
In a large bowl, sive flour, baking soda, cinnamon. Add a pinch of salt and mix the dry ingredients together.
In a separate bowl, mix together plant based milk, vegetable oil, sugar, vanilla extract, vinegar/lemon juice, and apple sauce to combine.
Tip in the chopped apples in with the wet ingredients.
Combine the wet ingredients with the dry and gently mix together. Careful not to overwork the mixture but still combine all ingredients.
Place mixture into a prepared loaf tin and place in the oven for 45 minutes.
Do the knife test! Insert a clean knife into the center of the cake, If the knife comes out clean, it's done. If it comes out gummy place it in the oven for another 10 minutes then check again.
Once removed from oven, remove from loaf tin and allow to cool!
Apple Spice Cake -- Three Ingredients
This is Marie's three ingredient apple spice cake. It can be served as cake only or it can be topped with a scoop of cool whip. Marie made an icing to put on top of hers. The cake recipe and the icing recipe is below.
Apple Spice Cake – Three Ingredients
1 box of spice cake mix
1 can apple pie filling
4 eggs
Mix ingredients together and bake in a 9 X 13 pan
Bake for 25 – 30 minutes at 350 degrees
Icing Recipe
1 cup of softened butter
½ cup brown sugar
1 tsp cinnamon
1 tsp vanilla
3 cups powdered sugar
2 tbsp milk
Mix the butter, brown sugar, cinnamon and vanilla
Until it is fluffy. Gradually add powdered sugar and mix.
Add milk if the icing is to thick, only add a little at a time.
Spread icing on cake after it is completely cooled.
Can be served right away or
Put is refrigerator to cool before serving.
Serve and enjoy.

Fresh Apple Spice Cake

Ingredients
1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated
Directions
Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
