Okra or popularly known as lady's fingers in South Asian countries. It is a perennial crop which can be grown all year round and had to be plucked when the pod is tender, otherwise will be too fibrous when it ages on the vine. Lends itself to all the cuisines of the world and every country has its own version from being batter fried in the US to fish head curry in Malaysia. My version is simple and can be prepared with spices to make it a one dish vegetable for a nice lunch. Enjoy !!!!

Recipe :-
Ingredients :-
Okra or lady's finger - 250gm.
B. Onion - 1/2
Garlic - 4 cloves
Green chili - 1/2
Curry Leaves
Chili powder - 2 tsp
Fennel powder - 1 tsp
Turmeric powder - 1/4 tsp
Pepper - 1/4 tsp
Lime juice - 1/4 tsp
Oil - 1 tbsp.
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Salt to taste
Wash the okra and pat dry before slicing it .
add in the spices and mix it with salt and set it aside.
Heat oil and add in the mustard seeds and cumin seeds.
Then add in the minced garlic , stir until browned.
Add in the sliced onion, green chili and curry leaves.
once browned, add in the okra mix and stir until combined.
Cover and cook until soft. Open and stir fry until dry.
Serve it with hot rice or chapatis. enjoy !!!

Ingredients :
- 300g okra
- garlic (as you like)
- chili (as you like)
- ½tbsp soy sauce
- ½tbsp oyster sauce
- 1tsp sugar
- ¼tsp salt
- ½tsp chicken powder
- 1tbsp corn starch
- 250ml water
- cooking oil
- 1tsp salt (put in boiling water)
- water (for boiling)
- ½tbsp sesame oil

Ingredients
Lady's Finger/Bhindi - 250 Gms
Oil
Whole Spice
(Bay Leaf, Cardamom, Clove, Cinnamon & Mace)
Onion - 2 Nos Chopped
Green Chili - 1 No. Chopped
Chopped Garlic - 2 Tsp
Chopped Ginger - 2 Tsp
Tomato - 3 Nos
Turmeric Powder - 1/4 Tsp
Chili Powder - 2 Tsp
Salt - 1 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1 Tsp
Curd - 1/2 Cup
Water - 1 Cup
Garam Masala - 1/4 Tsp
Sugar - 1/2 Tsp
Coriander Leaves
Kasuri Methi
Stuffed Okra Fry (Bharwa Bhindi) recipe -
Bendakaya Pulusu (Okra in Tamarind Gravy) recipe -
Method
1. Rinse the lady's finger in water and dry it completely before cutting them.
2. Cut the lady's finger to 2 inch pieces and keep aside.
3. To a mixer jar, add tomatoes and grind them to a smooth puree.
4. Grind this to a smooth paste and keep this aside.
5. Heat some oil in a kadai and fry the lady's finger and keep them aside.
6. Add some more oil to the same pan and add the whole spices.
7. Add the chopped onions, ginger, garlic, green chilies and saute them.
8. Add the ground paste and cook.
9. Add the spice powders and saute them well till oil is separated on the sides.
10. Add water and cook the gravy.
11. Add salt and the fried lady's finger pieces.
12. Cook the gravy well.
13. Finally add kasuri methi and coriander leaves and turn off the stove.
14. Serve the gravy hot with some rotis

8 large okra (weighing 170g in total)
Note: Blanch the okra in boiling water with some salt and cooking oil. Add more okra as needed. You don't have to increase the sauce proportion.

80ml hot water
0.5 teaspoon sugar
2 tablespoons black vinegar (replaceable with apple cider vinegar or white vinegar)
4 tablespoons light soy sauce
8 cloves chopped garlic
