How To make Spanish Rice with Beef
1 lb Lean Ground Beef
1/2 c Onion; Chopped, 1 Md
1 c Rice; Regular, Uncooked
2/3 c Green Bell Pepper; Chopped
16 oz Stewed Tomatoes; 1 Cn
5 ea Bacon Slices; Crisp,Crumbled
2 c Water
1 ts Chili Powder
1/2 ts Oregano Leaves
1 1/4 ts Salt
1/8 ts Pepper
Cook and stir the meat and onion in a large skillet until the meat is brown. Drain off the excess fat. Stir in the remaining ingredients. TO COOK IN A SKILLET: Heat the mixture to boiling then reduce the heat and simmer, covered, stirring occasionally, until the rice is tender, about 30 minutes. (A small amount of water can be added if necessary.) TO COOK IN THE OVEN: Pour the mixture into an ungreased 2-quart casserole. Cover and bake at 375 degrees F, stirring occasionally, until the rice is tender, about 45 minutes. Serve hot. -----

enough foil to cover pot
Ingredients to FEED 20+
10 cups Long grain rice
13 cups warm water
10 tomatoes
3 medium onions
8 garlic cloves
2 or more Jalapeños or serranos for spice
1 stick of butter for added flavor
3/4 cup of oil
Optional:
2 Tbsp white vinegar (read tip below)1 1/2 Tbsp ground cumin
Vegetables of choice such as peas, carrots, or corn
Ingredients to FEED 10+

6 tomatoes

3/4 cup of Tomato Chicken bouillon
1 or more Jalapeños or serranos for spice
1/2 stick of butter for added flavor
1/3 cup of oil
Optional:
1 Tbsp white vinegar (read tip below)1 Tbsp ground cumin
Vegetables of choice such as peas, carrots, or corn
TIP❣️
If you are making this for future use ADD white vinegar at the same time as blended ingredients. This will help preserve for around 6 months if frozen and about 7 to 10 days in the refrigerator ????
For the BEST presentation use basmati rice and adjust the water as suggested on the package

Old Spanish Rice Recipe with Michael's Home Cooking
Old 1970's recipe for Spanish Rice that I made when I was a kid. I used to have this with a slice of bread and canned corn for a complete meal. See description for full recipe.
Ingredients:
1 Tablespoon olive oil
1 cup chopped onion
1 cup chopped green bell pepper
1/2 pound ground beef
1 teaspoon salt
1 Tablespoon butter
1 cup long grain rice
1 teaspoon chili powder
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
2 cups water
2 Tablespoons Worcestershire Sauce
8 ounce can tomato sauce
Brown onions, green bell pepper and ground beef together.
Add your rice, salt, butter and other seasonings, stirring to coat rice with butter.
Add your 2 cups water, Worcestershire Sauce, and tomato sauce.
Cover and gently simmer for 25 to 35 minutes.
I cooked mine for 30 minutes and it was slightly overcooked.

Toast rice on medium heat
Cook rice in sauce @ lowest heat setting covered
Note: Substitution for chicken stock.
1 1/2 cups of water + 1 1/2 tsp of chicken bouillon
Rice, long grain 1 cup
Chicken stock 1 1/2 cups
Tomato, roma 1 ea
White onion, small 1/4 ea
Tomato, paste 1 TBSP
Garlic, clove 1 ea
Annatto, ground (achiote) 1/2 tsp
Turmeric, ground 1/4 tsp
Cumin, ground 1/8 tsp
Serrano pepper 1 ea
Salt to taste
Oil for cooking
