PRO TIP!!!!
✅make sure your rice is fully fried before adding the broth
✅pick the biggest and ripest tomatoes
✅washing rice is not necessary yet if you decide to rinse it make sure is fully dried before frying, when I do this I always rinse a couple hours before to make sure it’s fully dry by time i get ready to use it
✅I forgot to mention but make sure your pan is oven safe
Ingredients: 8 servings
2 cups long grain rice
3 large roma tomatoes
1/4 onion
1 garlic clove
1/2 tsp ground cumin
2 tsp chicken bouillon
2 tsp tomato bouillon
Salt I used 1 tsp
Cilantro and jalapeños are optional you can also use vegetables
2 cups water

2 cups long grain rice :
1/4 large white onion
3 TBSP smooth olive oil :
Sauce
2 tomatos (8 oz)
1/4 large white onion
1/2 red bell pepper (4 oz)
3 garlic cloves
2 TBSP tomato paste :
1/2 tsp achiote, ground :
1 tsp coriander, ground :
1/4 tsp cumin, ground :
4 cups of chicken broth or stock, low sodium :
1 ea serrano pepper
2 cups frozen mixed veggies

Mexican Rice in the Crockpot Express

Set crockpot to sear. Add 2 tablespoons of olive oil. Add 1 cup of rinsed rice of you choosing, I prefer Jasmine Rice. Brown rice till light golden. Add 1/2 onion and continue browning with rice for 20-30 seconds. Add 1/2 of salsa and continue browning for 20-30 seconds longer. Add 1 cup of water, 1 teaspoon of Knorr chicken powered broth, pepper and salt to taste. Close lid to lock position, and close pressure valve. Set crockpot to pressure rice/grains, set temperature to high, set cook time to 6 minutes. Allow to cook, after 6 minutes, allow pressure to naturally release for 10 minutes. After 10 minutes carefully move pressure valve to open, unlock lid, and carefully lift lid. Fluff rice.
This makes the most fluffy rice.
