Ingredients:
1 rack of beef back ribs
Mustard (for rub)
Beef rub (of your choice)
1 cup of 100% Maple syrup
¼ cup of bourbon
½ teaspoon of vanilla extract
2 tablespoons of light brown sugar
Instructions:
Rub both side of ribs with mustard of your choice, and then apply a generous coat of beef rub into meat. Prepare grill for indirect heat, and adjust to 225F. Place an aluminum container full of 50% water and 50% apple cider vinegar in the grill to create humidity for the ribs. Place ribs on to grate and place lid on grill and adjust temperature to 225 degrees F. After one hour, squirt squeezable Parkay margarine on top of ribs, and repeat every 30 mins for 4 hours. At the end of 4 hours of cooking time, pour 1 cup of Maple syrup into a pot, and heat to a simmer. Add in ¼ cup of bourbon, ½ teaspoon of vanilla extract, and 2 tablespoons of light brown sugar. Simmer for at least 10 minutes to burn off alcohol from the bourbon. Remove from heat. Baste ribs with the Maple-Bourbon sauce and cook an additional 20 to 45 mins, depending on the doneness of the ribs. Wrap with foil, and let rest for 20 - 30 mins, then cut ribs, and serve.
