Sopa fría de aguacate│ Avocado cucumber soup │Sandy's International Recipes
Sopa o crema de aguacate (palta) exquisita, fácil y muy fresca para disfrutar en días calurosos.
INGREDIENTES (4 porciones)
1 aguacate mediano (palta)
1/2 pieza de pepino
1 rama de cilantro, las hojas
1/8 taza jugo de limón
3 tazas caldo de pollo
Sal y pimienta al gusto
1. Pelar y retirar las semillas del pepino, cortar en trozos. Reserve.
2. Cortar el aguacate (palta) por la mitad, retire suavemente la pulpa pasando una cuchara por el borde manteniéndola lo más cerca posible de la piel, repetir con la otra mitad.
3. Combine el aguacate, pepino, hojas de cilantro, jugo de limón, caldo de pollo frío, sal y pimienta al gusto. Licuar hasta que no tenga grumos. Verter en un recipiente y refrigerar por lo menos 30 minutos antes de servir. Puede decorar con rebanadas de pepino y/o hojas frescas de cilantro.
RECOMENDACIONES:
1. Al pelar el pepino, evite dejar secciones verdes ya que puede amargar.
2. Utilice jugo de limón recién exprimido.
3. Si lo desea puede agregar medio aguacate más para obtener una textura mucho más espesa.
4. Totalmente recomendado para personas celiacas, ya que no contiene leche.

This avocado cucumber soup is delicious, easy, and very fresh to enjoy on those hot days.
INGREDIENTS (4 servings)
1 medium avocado
1/2 piece of cucumber
1 branch of coriander, leaves
1/8 cup fresh lemon juice
3 cups of chicken broth
Salt and pepper to taste
1. Peel and remove the seeds from the cucumber, cut into pieces. Set aside.
2. Cut the avocado in half, gently remove the pulp by running the spoon around the edge keeping it as close to the skin as possible. Repeat with the other half.
3. Combine avocado, cucumber, coriander leaves, lemon juice, cold chicken broth, salt, and pepper to taste. Blend until smooth. Pour into a container and refrigerate for at least 30 minutes before serving. You can garnish with slices of cucumber and / or fresh coriander leaves.
RECOMMENDATIONS:
1. When peeling cucumber, avoid leaving green sections as it can become bitter.
2. Use fresh lemon juice.
3. If you wish you can add half more avocado to obtain a thicker texture.
4. Fully recommended for people with celiac disease, as it does not contain milk.

How To Make Creamy Avocado Soup
FULL RECIPE BELOW
Follow along with our online culinary school chef as he shows you how to make a divine avocado soup! Serve this dish with some croutons or a delicious crostini for a healthy summer soup that feeds the soul without also feeding the scale!
CREAMY AVOCADO SOUP RECIPE:
Ingredients
1 tbsp butter
½ cup chopped onion
1 garlic clove, minced
6 cups chicken stock
3 ripe avocados, peeled and mashed
1 tsp lime juice
1 jalapeño pepper
2½ cups heavy cream
¼ tsp ground cumin
¼ cup fresh cilantro, chopped
Salt and pepper
Preparation
1. Heat the butter in a medium pot over medium heat. Add the onion and cook for about 2 minutes. Add the garlic, jalapeño and cook for about 30 seconds more.
2. Add the chicken stock, lime juice and avocado to the sauce pot and bring to a boil. Reduce the heat to medium and cook for about 5 minutes.
3. Puree the soup and blend until smooth. Add the heavy cream, cumin, salt and pepper.
4. Cook over medium heat for about 5 minutes. Add the fresh cilantro and serve warm.
