How To make Sopa De Elote(Corn Soup)
3 sm Ears corn (or 1 1/2 cups
-frozen whole kernel Corn, thawed) 1 Garlic clove
1/2 ts Salt
1 tb Butter
1 sm Onion, chopped
3 sm Tomatoes, peeled, chopped
-(3/4 lb) 1 qt Beef broth
1/2 ts Dried leaf oregano, crushed
1/4 c Whipping cream
cilantro leaves or parsley leaves If using fresh corn, cut kernels from cobs. Scrape cobs with a sharp spoon; discard cobs. Measure corn. You should have about 1 1/2 cups. Reserve excess corn for another use. Puree 3/4 cup corn in blender or food processor; set aside. Mash garlic with salt to make a paste. Melt butter in a large saucepan. Add onion and garlic paste. Cook until onion is tender but not browned. Add tomatoes. Cook slowly 10 minutes, mashing tomatoes with a spoon. Add broth, oregano, pureed corn and whole corn kernels. Taste and add salt if needed. Bring to a boil; reduce heat. Cover and simmer 30 minutes. Stir in cream. Cook until heated through, but not boiling. To serve, pour into soup bowls and garnish with cilantro or parsley. Hi guys ! Am back this time with a quick soup recipe which is guaranteed to leave you asking for more ! It's super yummy and filling and sure to warm up a cold day. In short comfort food at its best !

This quick Mexican corn soup or Sopa de Elote as it's so called is traditionally made using Mexican pablano peppers. In India we can substitute them for any broad mild green peppers. The sweet corn is usually not roasted but I chose to do so as I feel it imparts an earthy sweetness which balances well with the heat of the peppers.
Following are the ingredients:
Serves 2
Padron / pablano chilli peppers / any broad mild green chilli peppers- 4 to 5
Red onion- 2 small or 1 medium sized
Garlic - 4 cloves
Roasted corn ( you can roast sweet corn kernels in a pan till browned and cool before use ) - 2.5 cups
Basic Vegetable stock - 4 cups
Milk -4 tsp
Finely chopped pickled jalapeño - 1 tbsp
Salt and black pepper for seasoning
To serve:
Sour cream
Cheesy tortilla chips
Pickled jalapeño
Chipotle chilli pepper
Fresh coriander
Note:
Try using fresh sweet corn kernels and not frozen .

Los ingredientes que vas a necesitar para preparar esta deliciosa SOPA DE ELOTE son los siguientes:
5 elotes medianos desgranados (4 tazas)
1.5 litros de agua
55 gramos de mantequilla (1/2 barrita)
1/2 cebolla grande cortada finamente
1 diente de ajo mediano cortado finamente
2 jitomates roma cortados finamente
Unas ramitas de cilantro cortadas finamente
2 chiles poblanos
1 cubo de Knorr con sabor a caldo de pollo
1 lata de media crema Nestlé (270 mililitros)
120 gramos de queso panela (queso cotija, queso fresco)
Sal y pimienta negra molida al gusto
