How To make Shepherd's Pie (Syd)
1 lb Lean Ground Beef
8 oz Hot Italian Sausages *
16 oz Whole Peeled Tomatoes
1 1/2 c Sliced Fresh Mushrooms
1 Clove Garlic, Minced
2 tb Balsamic Vinegar
1 c Frozen Peas
1 tb Chopped Fresh Basil Or
1/2 ts Dried Basil
1 ts Salt
1/4 ts Dried Oregano, Crumbled
Fresh Ground Pepper To Taste 2 lb Potatoes **
3/4 c Milk
1/2 c Grated Parmesan Cheese
6 tb Butter, Room Temp.
* Hot Italian sausages should be cut lengthwise in half and sliced 1/4 inch thick. ** Potatoes should be pared and cut into 1 inch chunks. ~

~-- Place ground beef and sausages in a medium skillet. Cook, breaking up beef, over medium high heat until meat loses some of its pink color and releases juices. Add tomatoes, mushrooms, garlic and vinegar. Simmer uncovered, stirring occasionally and breaking up tomatoes, about 10 minutes. Stir in peas, basil, 1/2 ts salt, oregano and pepper. Simmer 10 minutes. Remove from heat. Meanwhile, boil potatoes in water to cover until tender, about 20 minutes. Drain potatoes and transfer to large mixing bowl. Beat in milk, cheese, butter, remaining 1/2 ts salt and pepper to taste; continue to beat until smooth. Heat oven to 350?F. Spoon meat mixture into 2 quart shallow casserole. Spoon potato mixture on top and spread evenly to edge. Bake until golden and bubbling, about 45-50 minutes. Let stand 10 minutes before serving. Serve hot. 436 calories per serving. Ingredients:
4 large potatoes (about 1.4 kg) peeled and roughly chopped
100ml lite thickened cream
20g butter
Salt & pepper
1 white onion, peeled and diced
2tsp garlic paste
450g beef mince (for cottage pie or lamb mince for shepherds)
2 carrots, peeled and diced
1 x 28g packet gravy
1 cup (250ml) water
1 cup (150g) frozen peas

Shepherds Pie A Do Ahead Favorite!
I love casseroles that can be done ahead of time, and either refrigerated or frozen for an easy and satisfying heat and serve later.
Follow along and I'll show you how.
You will need:
80/20 Ground Chuck
Carrots, Celery, Onion
Fresh Garlic
Tomato sauce or paste
Worcestershire sauce
Sweet Marjoram, Bay Leaves, Rosemary and Thyme
Flour
Beef Stock or Beef Base and Water
Russet Potatoes
Cheese of your choice
Butter
Whole Milk, non homogenized, low temperature pasteurized....the kind in the glass bottle with the cream on top!

Serves 6
Hands-on time: 30 minutes
Hands-off time: 20 minutes
INGREDIENTS
6 medium potatoes, peeled and cubed
¼ cup milk
¼ tsp each salt and pepper, to season
1 tin (400g) Lucky Star Pilchards in Tomato Sauce
4 tbsp (56g) butter
½ onion, diced
2 cloves garlic, minced
1 tin (410g) Lucky Star Chakalaka Mild & Spicy
½ cup frozen mixed vegetables
1 cup grated cheddar cheese
Serving suggestion:
Coriander
Salad
METHOD
1. Preheat the oven to 180°C with fan assist.
2. In a medium-sized pot, add the cubed potatoes to boiling water and cook for 8-10 minutes until tender. Drain the potatoes well before adding 3 tablespoons of butter, the milk and ¼ teaspoon each salt and pepper, to taste. Mash with a potato masher or fork until soft, creamy and free of lumps. Set aside for assembling later.
3. Remove the Lucky Star Pilchards in Tomato Sauce from the tin and carefully remove the bones using a fork. *Chef’s Tip: It is not necessary to remove the bones as they are safe to consume!
4. In a medium-sized pan, add 1 tablespoon of butter and the onions and sauté for 3 minutes until softened. Add the garlic and sauté for 10 seconds. Add the deboned pilchards and their sauce, Lucky Star Chakalaka Mild & Spicy and frozen mixed vegetables to the pan. Simmer for 5-8 minutes, uncovered.
5. Transfer the pilchard filling to a 20cm square baking dish. Carefully add the creamy mashed potato over the pilchard filling and spread the mash evenly with the back of a spoon.
6. Sprinkle the grated cheese over the mashed potato layer and bake for 15-20 minutes until the cheese has lightly browned and crisped.
7. Once baked, garnish the cottage pie with the freshly chopped coriander. Serve with a side salad and ENJOY!
