Top of the Morning to ya and Happy St. Patrick’s Day my Friends!!
Today I am making a great Dessert that is no Oven required, Grasshoppers Pie!!!
A Grasshopper Pie is a Chocolate Mint flavor pie with Grasshopper Chocolate Mint Cookies in the filling. If you’re a fan of Chocolate and Mint, y’all will enjoy this creamy, decedent No Bake Pie! Just in time for St. Patrick’s Day or any time of the year!!
Ellen’s Chocolate Mint Dessert Recipes:
Ellen’s Homemade Whipped Cream Recipe:
1 (8 oz) package cream cheese, softened
1 (14 oz) can sweetened condensed milk
15 drops green food coloring
1 tsp pure vanilla extract
1 tsp pure mint or peppermint extract
16 grasshopper chocolate mint cookies, coarsely chopped + more for garnish
2 cups fresh whipped cream
1 (9 inch) chocolate graham cracker crust
In a large bowl with a hand mixer, add cream cheese and cream until fluffy. Next add and beat in sweetened condensed milk until well incorporated. Then add and mix in food coloring, vanilla and mint extract until well combined. Stir and food in grasshopper cookies then the whipped cream. Pour filling into the chocolate crust, cover with plastic wrap and put it in the refrigerator and freeze overnight. The next day, garnish with more chopped grasshopper cookies on top, cut into slices and serve.

Costco's Chocolate Peanut Butter Pie hack.
For the peanut butter mousse:
1 Cup creamy peanut Butter sweetened. (Or add 1/2 cup powdered sugar)
1 cup heavy cream
1 cup cream cheese room temp.
2 tsp vanilla extract
Blend.
For the Chocolate Mousse:
Store-bought optional.
Make it
1/8 cup cocoa
1/2 cup sugar
1 cup dehydrated heavy cream (70%)
1 cup water
1 tsp vanilla extract
blend.
Pie Crust:
Store Bought Or Make it.
St. Patrick's Day Shamrock Shake -- Lynn's Recipes
Lynn demonstrates a great milkshake for St. Patrick's Day. Super easy and delicious.
1 pint (2 cups) vanilla ice cream
1 cup milk
½ teaspoon peppermint extract
¼ teaspoon green food color
Whipped cream and green and chocolate sprinkles, optional
Place ice cream, milk, peppermint extract and green food color in the blender, cover and blend on high speed until smooth.
Pour into glasses and top with whipped cream and sprinkles, if desired. Serve immediately.

Shamrock Shake Pie
Ingredients:
2 3.4 oz vanilla instant pudding mix
2 cups milk
8 oz cool whip thawed
1/2 to 1 tsp mint extract
16 drops green food coloring
Store bought graham cracker crust
Instructions
In a large bowl, mix together the pudding mixes and the milk until well combined. Then add the cool whip, the mint extract, and the green food coloring.
Pour the mixture into a premade pie crust. Refrigerate until completely set, about four hours or overnight.
Serve it with whip cream and a cherry.
Black Eyed Peas – Southern Cajun Style
Ingredients:
1 pound black eyed peas
4 -5 thick bacon slices
1 cup smoked sausage
1 large onion diced
1 stalk celery diced
2-3 teaspoons minced garlic
1 Jalapeno sliced (optional)
2 teaspoons thyme
1-2 teaspoons creole or Cajun seasoning
6-8 cups chicken broth
2 cups kale chopped
Salt and pepper to taste
Instructions:
1. Rinse dry black-eyed peas.
2. Add beans to a large pot covering with 3-4 inches of cold water. Cover and let sit for about 2-3 hours.
3. In a large pot, saute chopped bacon until brown and crispy about 4-5 minutes, then add sausage saute for about 2-3 more minutes. Remove bacon and sausage mixture, set aside.
4. Throw in the onions, celery, garlic, jalapenos, thyme and saute for about 3-5 minutes
5. Drain the soaked beans, rinse, and place the beans in the pot.
6. Then pour in the chicken broth or water.
7. Season with creole or Cajun seasoning and salt to taste. Mix and bring to a boil.
8. Reduce heat to a simmer and cook, uncovered until beans are tender and slightly thickened to your desire.
9. Throw in the kale, and bacon and sausage into the pot, continue cooking for another 10 minutes or more, stirring occasionally
10. Add more stock or water if the mixture becomes dry and thick, the texture of the beans should be thick, somewhat creamy but not watery.
11. Taste and adjust for seasonings with pepper, creole seasoning and salt if needed. Serve over cooked rice

Add all ingredients into a shaker with ice and shake.
Strain into a shot glass.
Top with whipped cream.
Garnish with an Andes crème de menthe thin.
