Sesame Rosemary Crackers
It has been a while since my last upload but today I am sharing one of my favourite snacks, sesame crackers! Similar to what you would find in your bread basket at restaurants, these crackers are crispy and delicious.
Ever since making these, I've replaced my Cheetos and bags of chips with these instead. They're a healthy alternative and you're free to play around with the seasoning.
I've used black sesame seeds but a mix of black and white sesame seeds is an option too. Don't like rosemary? Swap it out for some garlic or onion seasoning!
I've made this recipe countless times and here are some things I've learned:
1. If you prefer more of bread than a chip texture, use yeast. BUT If you use yeast, the chips will go stale much quicker.
2. Make sure the roll the crackers thin enough or you will get stale crackers the next day.
3. Part of the recipe requires you to use a pasta roller (if you have one). If you find that it is quite hard feeding the dough through the machine, roll it flat and cover the dough generously with flour first. Have the setting set to the 3rd lowest first. Roll the dough out. Then feed it again on the 2nd lowest setting.
4. Keep an eye out on your crackers. The estimated time is 15 minutes but depending on how thin you have rolled the dough out, your oven time will differ.
5. I use sesame oil but you may use vegetable oil as well. Sesame oil will give you the extra flavour that the vegatable oil will not.

289 g all purpose flour
2 tsp salt
2 tbsp rosemary/italian seasoning
178 ml water
3 tbsp sesame oil
3/4 cup sesame seeds

80 g cheese
80 g cold butter
150 g all purpose flour
2 tbsp cold milk
Pinch of salt
2 tsp jeera
1 tso red chilli powder
Bake in a pre heated 160 degree oven for 20 mins or till golden brown.

Here is what you'll need!
Homemade Cheese Crackers
Servings: 6-8
INGREDIENTS
8 ounces shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup flour
2 to 3 tablespoons ice water
PREPARATION
1. Preheat oven to 350˚F/180˚C
2. Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
3. Once combined, mix in the flour and add the ice water one tablespoon at a time. The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
4. Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
5. Roll out dough to ⅛ of an inch, pinching the cracks on the ends.
6. Cut into 1 inch x 1 inch squares and pierce a hole in the middle of each square for ventilation during baking.
7. Place the separated crackers on a parchment paper-lined baking sheet. Bake for 13 minutes, or until golden brown.
8. Enjoy!
