How To make Senator Joseph Montoya's New Mexican Chili

1 1/2 lb Round steak, cut in 1/4" -cubes 2 Cloves garlic, minced 2 T Oil 1 1/2 t Flour 3 T Unspiced chili powder 2 c Water 1 t Salt Heat oil in saucepan of Dutch oven, add meat and cook and stir 10 min. add garlic when meat is partially browned. Sprinkle with flour and stir 1 min longer. Add chili powder, water and salt. Cover and simmer 45 min. Serves 4

The film highlights voices from the community, including Rosa Linda Aguirre, who tells the story of her beloved restaurant Rosa Linda’s; founder and CEO of Tepeyac Community Health Center Jim Garcia recounts how members of Our Lady of Guadalupe Church stepped up to create the clinic and its evolution; artist and activist Santiago Jaramillo talks about bringing art to Westwood; and Federico Peña shares what it was really like to be Denver’s first Latino mayor. The I Am Denver film from the Denver Office of Storytelling includes Colorado State Historian Nicki Gonzales, who acted as a consultant for the city’s first Chicano/Latino Historic Context, of which this film is companion, and historian and professor Tom Noel, who is also known as Dr. Colorado. Packed with historic images and with no narrator or voice over, the film documents, honors and preserves this proud history in the voices of the people.

Jane Fraser was a professor of engineering for 40 years, most recently serving as Chair of the Department of Engineering at CSU-Pueblo. She has a PhD in engineering from the University of California at Berkeley and a bachelor's of arts in mathematics from Swarthmore College. She is enjoying retirement by keeping busy as the Treasurer of the Boys & Girls Clubs Board, the Treasurer of the Southern Colorado Economic Development District Board, the Secretary of the 2030 Commission, and a member of Pueblo’s Energy Future. She convenes the group Pueblo Makes. She and her partner Mark Weber live 10 miles down a dirt road on 53 acres in Hatchet Ranch.
