How To make Semolina Saffron and Pistachio Helva (Irmik Helvasi)
Karin Brewer 1/2 ts Saffron threads
2 tb Hot milk
1/3 c Shelled unsalted pistachios
9 tb Unsalted butter
1 c + 2 to 4 tb sugar
2 c Milk
1 c Semolina
Soak the saffron in the hot milk for at least 30 minutes. Heat a heavy frying pan and toast the pistachios with 1 tablespoon of the butter for 2 minutes, until they are lightly toasted but still green. Remove as much skin as you can from them and set aside. Dissolve the sugar in the milk over low heat and keep the mixture hot. Melt the remaining butter in a heavy saucepan, add the semolina, and cook, stirring, over low heat for about 8 to 10 minutes. Stir the saffron milk into the hot sugared milk and add to the semolina, and cook, stirring vigorously. Remove the helva from the fire, cover, and allow to stand in a warm spot for 15 minutes. Fold in the pistachios and serve warm or at room temperature in bowls. 1 cup cornflour
3 cups sugar
1/4 tsp citric acid
1/2 cup ghee
Yellow color as required
1 tsp saffron soaked and crushed
15-20 green cardamomo peel and separate the seeds
50g cashew nuts chopped In pieces
25g almonds chopped in pieces
25g pistachios chopped in pieces.

4 tbsp Besan
1 tbsp Green Cardamom powder
1/2 cup Sugar
7-8 Almonds (Chopped)7-8 Pistachios (Chopped)

How To Make Sooji Besan
How to Make Sooji Besan Halwa
1.Firstly, heat ghee in a pan. Once the ghee melts, add sooji (semolina) and sauté until it turns light brown.2.Then, add gram flour and sauté for 3-4 minutes on high heat, stirring continuously to avoid stickiness. Add saffron and mix.3.When the sooji, besan and ghee mixture turn light brown, add milk slowly and keep stirring.4.Reduce heat, cover and cook for a minute or more.5.Add green cardamom powder and sugar and mix till the sugar dissolves.6.At last, garnish with almond and pistachio slivers and serve hot.

???????? BAKED TAHINI HALVA is a pretty popular dessert in fish restaurants in Turkiye????????. Did you know that tahini is a great cleanser for heavy metals? I don’t know how elders knew about this centuries ago. They used to eat tahini after fish meals.
This is such an easy dessert to make. It comes together within minutes. Baking time is longer compared to preparation steps. It is mostly served hot/warm. It hardens as it cools down so pls eat it fresh out the oven. Maybe you want to try this dessert after your next fish meal ????
Ingredients:
- 100 gr tahini halva
- 40 gr milk
- 2 tsp ???? juice (for freshness)
- 1/2 tsp ???? zest (for freshness)
- 1 tsp butter
Instructions:
• In a casserole (or ramekin or heatproof bowl) mash the halva with milk, ???? juice and zest.
• Add the butter.
• Bake in a preheated 375F (185C) oven for 25 minutes or until a crust is formed and the mixture is puffed.
• Serve it hot/warm. If you like, add chopped walnuts and cinnamon powder for a great touch ????????

Yapılışı:
• Helvayı, sütü, ???? kabuğunu ve suyunu güveçte ya da ısıya dayanıklı kâsede/sufle kabında çatalla ezin.
• Tereyağını ekleyip önceden ısıtılmış 185-190 derece fırında 25-30 dk kadar pişirin. Üstü kabuk bağlamış ve tatlı kabarmış ise hazırdır ????????
• İsterseniz doğranmış ceviz ve tarçın ile lezzeti artırabilirsiniz.

400 मिली. गर्म पानी
2 चुटकी केसर कलर
1 कटोरी सूजी (100 ग्राम)
70 मिली. देसी घी
1 छोटा चम्मच ईलायची पाउडर

6-7 काजू की टुकड़ी
5-6 बादाम की टुकड़ी
100 ग्राम चीनी
पिस्ता की टुकड़ी

Ingredients:-

2 pinch saffron colour
1 bowl semolina (suji) 100 gms.
70 ml. pure ghee
1 tsp cardamom powder
15-20 pods raisins
6-7 broken cashew
5-6 grated almond
100 gms. sugar
