Revani - Greek Semolina Cake With Syrup | Εύκολο Ραβανί Με Σιμιγδάλι
This traditional Greek semolina cake with syrup, known as ravani or revani, is moist from a lemony flavored syrup, fluffy and nutty from the semolina flour. It's quite easy to make and it will take you just over an hour to prepare and bake. Serve it with a scoop of ice cream or some whipped cream on the side and you will have everyone asking for another slice. Enjoy!

CAKE INGREDIENTS
- 350gr / 2 cups fine semolina flour ( paid link)
- 150gr / 1 1/4 cup plain flour
- 150gr / 2/3 cup butter at room temperature
- 170gr / 3/4 cup sugar
- 4 eggs
- 200gr / 3/4 cup yogurt
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- lemon zest

Πανεύκολο Αφράτο Ραβανί Με Σιμιγδάλι
Αυτό το παραδοσιακό σιμιγδαλένιο ραβανί ή ρεβανί, έχει ένα εξαιρετικό σιρόπι με άρωμα λεμόνι και είναι αφράτο και κίτρινο από το σιμιγδάλι. Είναι αρκετά εύκολο να το φτιάξετε και θα σας πάρει λίγο περισσότερο από μία ώρα για να το ετοιμάσετε και να το ψήσετε. Σερβίρετε με μια μπάλα παγωτό ή λίγη σαντιγί στο πλάι και θα έχετε όλους να ζητούν άλλο ένα κομμάτι. Καλή όρεξη!

- 350γραμ. / 2 κούπες ψιλό σιμιγδάλι
- 150γραμ. / 1 1/4 κούπας αλεύρι γ.ο.χ.

Turkish Food Recipe - How to make Turkish Semolina Cake Revani
Turkish Semolina Cake, or Revani, is a very simple recipe which you can dress up however you like. Revani is basically a yellow cake made from flour and semolina, which is just a coarse flour made from durum wheat. After the cake has baked, you pour on a sugar syrup, similar to baklava, and top it off with either coconut flakes or your favorite whipped cream.
Ok, I agree, the sugar syrup sounds like a bit much. But once it soaks in to the cake, it turns into a lightly moist cake that is easy to eat without needing a drink to go along with it. This cake has a nice vanilla flavor to it and the semolina gives this cake a nice consistency. It really puts a new spin on the traditional yellow cake. There are all sorts of different varieties though. Some are sprinkled with nuts, coconut flakes, topped with whipped cream or ice cream, and sometimes poppy seeds are added to the cake mix.
INGREDIENTS
2 Cups Sugar =Sugar Syrup
2 Cups Water =Sugar Syrup
3 Eggs *can substitute 3/4 cup mashed bananas or Aquafaba
3/4 Cup Sugar
1/4 Cup Oil
3/4 Cup Plain Yogurt *can substitute vegan yogurt
1 Cup Flour all-purpose
3/4 Cup Semolina Flour
2 tsp Baking Powder
1 tsp Vanilla Extract
Coconut Flakes or Whipped Cream for topping

Easy Turkish Cake Revani / Semolina Cake ( Basboussa )
Revani Semolina cake is a fluffy very light cake made with eggs, semolina, and little flour. In Turkish, we call Revani but it is also well known in middle east countries as Basboussa
We really love this traditional Turkish dessert and serve it especially on Ramadan and in the dinner menu for our guests.
There are many different kinds made with milk or yogurt or with more oil. But because we really like this version I choose this one to share with you. I am really excited. And to show you how easy it is to make my daughter made this dessert for you:)
Ingredients for Revani Semolina Cake:
For the syrup:
1+1/2 cup sugar
2 cups of water
1/2 ts lemon juice
For the semolina cake:
4 eggs at room temperature
1/2 cup sugar
1 lemon or orange rind or vanilla
1 tbsp vegetable oil
1/2 cup semolina flour
3/4 cup all-purpose flour
1 package baking powder (2 tsp)
To serve: about 1/3 cup unsweetened grated coconut
About 20X28cm rectangular or similar medium size pan
Instructions:
For the syrup stir water and sugar in a small pan and heat. After boiling for 5 minutes pour dropped lemon juice boil 30 seconds more. turn off the heat and let it cool.
For the semolina cake:
In a big bowl mix eggs, sugar, and lemon rind until light and fluffy about 4 minutes.
Add oil, then semolina, flour, and baking powder. Mix on low until everything is corporated.
Grease 20 x 28 cm or similar size pan. Pour the cake mixture over and bake in a preheated 170C degree oven until golden brown and risen.
After 5 minutes taking out from the oven pour the cooled syrup slowly and wait until it soaks all of it.
Sprinkle unsweetened grated coconut generously and serve

Revani dessert dates back to Ottoman Empire, and said to be invented after the conquer of Yerevan. It has semolina in it and soaked in a syrup to make it extra super moist & spongy.
It is similar to Basbousa but has its own differences.
There are many versions: plain, lemony, coconuty, caramelized etc. In winter, I crave for orange one a lot. It is very light to enjoy, bursts with orange flavor & easy to make.

Revani tatlısının tarihi Osmanlı'ya kadar uzanır, Erivan'ın (Revan) fethinden sonra icat edildiği söylenmektedir. Orta Doğu'daki basbousa tatlısına benzer; ama kendine has farklılıkları vardır.
Sade, limonlu, hindistan cevizli, karamelize vs. birçok versiyonu var. Kışın, portakallısını canım çok çekiyor. Tadı çok hafif, portakal dolu ve yapımı kolay.

- 3 medium eggs at room temperature / 3 orta boy????,oda sıcaklığında
- 0.5 cup sugar / 0.5 su b.şeker
- 1 orange peel / 1????kabuğu rendesi
- 1 cup yogurt / 1 su b. yoğurt
- 1 cup oil / 1 su b. sıvıyağ
- 0.25 tsp turmeric for coloring / Renk için 0.25 çay k zerdeçal
- 1 cup semolina / 1 su b. irmik
- 10 gr baking powder / 1 pkt kabartma tozu
- A pinch of salt / Bir çimdik tuz????
- 1.5 cup flour / 1.5 su b. un
(For the syrup/ Şurubu için)
- 1 cup sugar/ 2/3 su b. şeker
- 2,5 cups orange juice / 2,5 su b. portakal suyu
- 1.5 cups water / 1.5 su b. su????
NOTES / NOTLAR:
- The cup I used is 240 ml. / Kullandığım su b 240 mllik.
- You can add 0.25 cup poppy seeds. / Kek harcına çeyrek su b haşhaş tohumu ekleyebilirsiniz.
- Prepare the syrup first; let it cool down to room temp. I used less orange juice than the recipe but found it'd taste better with more juice / Önce şerbeti hazırlayın. Tarifte yazandan daha az ???? suyu kullandım ama bence daha fazla ile lezzeti katlanacak.
- Taste your orange juice. If it is sour, use 1 cup of sugar for the syrup. / Portakal suyunuzu tadın; ekşiyse, şerbette toplamda 1 su b. şeker kullanın.
- I used an 11-inch pan. / 26 cmlik kalıpta pişirdim.
- I baked in a preheated 350F(175C) oven for 35 min. The top should set and have a golden brown color. Insert a toothpick in the center, if it comes out clean, remove your cake from oven./ Önceden ısıtılmış 180C’de 35 dk pişirdim. Tatlının üstü kızarmış olmalı. Kekin ortasına batırdığınız kürdan temiz çıkınca, keki fırından alın.
- After removing from oven, cut into slices & wait for 10 min. before pouring syrup. / Fırından çıkınca dilimleyin. Şerbeti dökmeden önce revani 10 dk beklesin.
- Tastes better next day. / Tadı ertesi gün daha güzel.
- Keep in the fridge covered. / Üstü kapalı olarak buzdolabında muhafaza edin.
