Homemade Breakfast Scrambled Egg Rolls | Plate It Perfect
MAKE THE PERFECT BREAKFAST EGG ROLLS AT HOME TO EAT ANYWHERE, ANYTIME! On this episode of Plate It Perfect®, Callie combines the convenience of a breakfast burrito and size of an egg roll to make the ultimate breakfast scrambled egg rolls!

Recipe (10 egg roll wrappers):
• 6 large eggs
• ¼ cup milk
• 1 teaspoon salt
• ½ teaspoon pepper
• ½ cup bacon precooked and chopped
• ½ cup cheddar cheese shredded
• ¼ cups scallions chopped
• 2 tablespoons vegetable oil
Directions:
• In a large bowl, whisk together eggs, milk, salt, and pepper.
• In a large skillet, heat oil over medium/low heat. Add the
scrambled eggs and cook, stirring occasionally, to your desired
doneness. Add cheese, bacon, and scallions and mix until
combined.
• Preheat the oven to 400°. Line a baking sheet with parchment
paper and set aside
• Lay egg roll wrapper on a flat surface at 45° angle, with one corner
facing you.
• Scoop 1/4 cup of filling on bottom 1/4 of the wrapper. Take the
bottom corner and flip up, until it just covers filling
• Fold side edges in, to form what looks like an envelope. Fold side
edges in again
• Roll the wrapper up, leaving the top corner exposed. Spray the
corner lightly with cooking spray to help the roll stay together. Roll
over the final corner, and lay rolls seam side down
• Finish assembling remaining egg rolls, and place seam side down
on a lined baking sheet. Spray lightly with cooking spray.
• Bake for 15-18 minutes, until golden brown
Styling Tips:
Adding milk to whisked eggs will make the consistency fluffier
Adding a little salt will help bring out the flavor of the eggs
Soft scrambled is achieved by controlled lower heat to get a lighter texture
Use parchment paper to bake so the rolls don’t stick to the pan
Use cooking spray on the top to seal the roll together

Meal Prep Breakfast Taco Scramble -
Modifications: substituted lean ground sausage for the ground turkey

Copycat Chile Lime Burgers -
4 Patties - 2 SP each patty
Blueberry Chia Seed Jam
16 Tbl
2 Tbl = 0 SP
2 Cup frozen or fresh blueberries
3 Tbl sugar free maple syrup
1 Tbl fresh lemon juice
2 Tbl chia seeds
Combine all but the chia seeds. Bring to a boil - simmer until berries start to pop. Slightly mash berries. Add in chia seeds, bring to a boil and allow to simmer for a few minutes. Transfer to a glass jar for storage.

Breakfast Pizza: with eggs, bacon and cheese! | The Recipe Rebel

INGREDIENTS:
Pizza Dough
1 ½-2 cups all purpose flour 195g plus more for rolling
1 package instant or quick yeast (2 1/4 teaspoons)
¾ teaspoon salt
1 teaspoon granulated sugar
½ teaspoon dried oregano
¼ teaspoon garlic powder
⅔ cup warm water
2 tablespoons oil
Breakfast Pizza
3 slices thick cut bacon
4 eggs
1/4 cup milk
1/4 teaspoon salt
1 pinch black pepper
1 tablespoon oil
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
2 cups shredded mozzarella cheese
1 green onion (sliced) about 1 tablespoon
INSTRUCTIONS
Pizza Dough
In a medium bowl, stir together 1 cup of flour, yeast, salt, sugar, oregano and garlic.
Add water and oil and stir until combined — it will be a very wet dough.
Add just enough of the remaining flour so that a soft but not sticky dough forms. Add the flour gradually and knead briefly until combined so that you can feel when it is ready — it will still be soft (not feel firm or tough) but won’t stick to your hands. To knead, simply press the flour into the dough, fold the dough and press, fold and press.
Place in a lightly greased bowl and set covered in a warm, draft-free place to rise until doubled, about 40 minutes.
Breakfast Pizza
Heat oven to 425 degrees F and line a baking sheet with tin foil.
Lay bacon strips on foil and bake for 12-15 minutes, until crisped to desired doneness. Remove from the oven and set aside on paper towel to cool slightly before chopping.
Whisk eggs, milk, salt and pepper until combined. Cook in a medium skillet, stirring often, until scrambled. Set aside.
Roll out pizza dough so that it is just a bit larger than your pan. Place on a lightly greased pizza pan (this makes one 12 pizza). Fold the edges over and pinch so that your dough fits your pan exactly with a slightly thicker edge.
Stir together oil, garlic powder and parsley. Brush over pizza crust.
Top with cooked eggs, bacon and cheese and bake at 425 degrees F for 12-15 minutes, until light golden brown.
Sprinkle with green onions and serve as desired.
