How To make Sambuca Biscotti
1 1/2 ts Anise seeds; toasted
2 1/4 c All-purpose flour; unsifted
2 ts Baking powder
2 ts Lemon zest; grated
1/2 ts Salt
1/2 c Unsalted butter; cold, cutup
1 1/2 c Pine nuts; toasted
3/4 c Sugar
2 lg Eggs
1/4 c Sambuca liqueur
Place seeds in food processor; add flour, baking powder, zest and salt. Mix. Add butter; pulse until crumbly. Add 1 cup nuts and the sugar. Pulse until nuts arre finely ground. In bowl, mix eggs and liqueur. Add to flour mixture; pulse to blend. Place in bowl; stir in remaining nuts. Cover; chill 4 hours. Preheat oven to 325 degrees F. On lightly floured surface, roll dough into 2 (16 x 1 1/4-inch) logs; place 4 inch apart on ungreased baking sheet. Bake 35 minutes or until firm; loosen with metal spatula. Slide onto cutting board. Cool 10 minutes. Reduce oven to 300 degrees F. Cut log diagonally into 1/2-inch thick slices; lay cut side down on baking sheet. Bake 15 minutes or until dry, turning slices over after 7 minutes. This Italian twice-baked cookie makes the perfect biscuit to pair with your morning coffee, afternoon tea or big mug of hot chocolate. Learn how to make them with our pastry chef!
BISCOTTI RECIPE:
Ingredients
4 oz butter
6 oz sugar
½ teaspoon salt
2 eggs
12 oz pastry flour
1 ½ teaspoon baking powder
3.5 oz almonds
Directions
1. Cream the butter and sugar until well incorporated and then slowly add the eggs.
2. Mix in the flour and then mix in the almonds by hand
3. Form 2 logs and bake at 325 degrees for 30-40 minutes until they begin to turn golden brown in color.
4. Once the logs have cooled, slice and bake again at 275 degrees until dry and toasted.

150 gr. of granulated sugar
20 gr. of ground coffee
4 gr. of baking powder
1 pinch of salt
2 eggs
30 ml. Sambuca or anise
20 ml. of olive or seed oil

Caster sugar.

I biscotti al vino bianco sono delle semplici ciambelle preparate con pochi ingredienti, molto friabili, tipici del Lazio,che si conservano a lungo in luogo asciutto e che vengono consumati a fine pasto per essere inzuppati in un bicchiere di vino rosso.Sono dei biscotti privi di ingredienti di origine animale e pertanto vanno bene anche per i vegani .
Ingredienti:
500 g. farina '00'
mezza bustina di lievito per dolci
140 g.zucchero
100 ml. olio semi girasole
140 ml. vino bianco
50 ml. liquore anice
zucchero per ricoprire i biscotti (ciambelline)
infornare a forno già caldo a 180°C per 20 minuti ,la cottura varia a seconda del proprio forno.
