How To make Salad Nicoise
8 oz Beans; green, topped & tail
16 Potatoes; new, small, peeled
4 Eggs- hard boiled, sliced
1 cn Tuna; 7 1/2 oz drained
3 Tomatoes; cut in wedges
1/2 ts Mustard; dijon
1 Garlic clove- finely chopped
2 T Vinegar; red wine
1/2 c Olive oil
1 T Parsley- finely chopped
1 T Chives; fresh chopped
8 Anchovy fillets (opt)
16 Olives; black
Cook green beans in pot of boiling water,add green beans and boil till tender crisp, about 2-3 minutes. Refresh with cold cold water and dry. In large pot of salted water, bring potatoes to a boil. Cook till tender, about 8 minutes. Combine green beans, potatoes, tuna, tomatoes in large bowl. In small bowl, whisk together mustard, garlic and vinegar. Add oil slowly, then parsley and chives. Season with pepper and pour over ingredients. Top with eggs, anchovy fillets and eggs. If green beans aren't available, you can use green and or red pepper. President's Choice Memories of Gilroy garlic sauce can be added to olive oil, instead of chopped garlic.

Julia Child was WRONG! The real Nicoise Salad Recipe
Here is the authentic recipe for Salade Niçoise, and I'm sorry to say it is not at all what Julia Child has been teaching all these years!
I was shocked when I first read her recipe, so I made this video to help all of you poor non French people to make this delicious salad the right way
It's actually much easier! And healthier.
No baked potatoes. No precooked green beans.
Just RAW vegetables, canned tuna, anchovies, olives and eggs.
That's what peasants or fishermen from Nice would make and eat on the go so they used only fresh and raw veggies.
And don't get me wrong, I love Julia Child, and she was not the only one to be in the wrong, nicoisewise. But I thought you might like to know the TRUTH!
(also there is a comity in Nice, where the Nicoise was invented, that protects the real authentic recipe so if you don't want them to put all France in the streets to protest, better start making the authentic recipe now...)
INGREDIENTS
3 eggs
1 garlic clove
1 tablespoon red wine vinegar
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons olive oil
4 cups arugula or mixed salad greens
4 tomatoes,
4 green onions
8 anchovy fillets in olive oil, drained
1 (5-ounce) can tuna in olive oil
6 large basil leaves, shredded
1/2 cup small black olives

ingredients:
1 head of Lettuce large, washed and dried
1 cup fresh green beans trimmed, blanched
3 or 4 tomatoes quartered
tin of salmon
2 cups French potato salad recipe follows
4 hard-boiled eggs halved lengthwise
2-3 flat anchovy filets packed in oil
1/2 cup black Nicoise-type olives
3 or 4 Tbs. capers
Olive oil for drizzling
Salt and pepper to taste
French Potato Salad
5-6 white potatoes cooked to fork tender
1-2 Tb olive oil
1 Tb white wine vinegar
Salt and pepper to taste
Flat leaf parsley chopped
Vinaigrette (makes about 1/2 cup)
1-2 Tb red wine vinegar or fresh lemon juice
¼ tsp mustard
1/2 cup olive oil
Salt and pepper to taste

This salad recipe is easy, healthy and something that the whole family can get into. I make this a lot for the kids because they love it and I feel good about them eating fish, eggs, and veggies. Pull it out any day of the week, it’s a crowd pleaser!

???????? INGREDIENTS:
Salad:
• 100g + 20g red wine vinegar
• 1 red onion, thinly sliced
• 2 lebanese cucumbers, peeled and halved lengthways
• 100g cherry tomatoes
• 10g extra virgin olive oil
• 3 radishes, thinly sliced
• 100g green beans, blanched and cut in thirds
• 50g marinated black olives + 20g olive brine
• ½ bunch basil, roughly chopped
• ½ head butter lettuce, washed and trimmed
• 140g tinned tuna, best quality
• 2 soft boiled eggs, quartered
• salt and pepper
Dressing:
• 1 clove garlic, peeled
• 30g red wine vinegar
• 50g extra virgin olive oil
• 5g White soy
• black pepper
???????? METHOD:
Cover the sliced red onion in 100g red wine vinegar and leave to pickle for 15 minutes. Cut the cucumbers and cherry tomatoes into random bite-sized pieces, then dress with 20g red wine vinegar, 10g extra virgin olive oil, salt and pepper. Set aside for 15 minutes to draw out moisture.
For the dressing, rub the whole clove of garlic into the surface of a wooden mixing bowl, then discard. Add the vinegar, extra virgin olive oil, white soy and black pepper. Pour into another bowl.
In the now empty mixing bowl, toss together the radish, beans, olives and brine, tuna, basil and lettuce. Squeeze all the liquid from the pickled onion and add to the bowl. Strain the marinated cucumber and tomato and add to the bowl.
Mix the strained tomato and cucumber juices in with the salad dressing and adjust seasoning if required. Pour half the dressing over the salad and coat.
To serve, layer the lettuce into a serving bowl, then followed with the eggs (seasoned with a touch of salt) and remaining ingredients. Top with the remaining dressing.
