1 1/4 c sugar 1/3 c butter 1 egg 1 1/2 tsp vanilla 1/2 tsp almond extract 2/3 c flour 5 tbsp cocoa 2 tsp baking powder 1/2 tsp salt 1/3 c milk 2 c rolled oatmeal -- up to 2 1/2 cups Cream the sugar, butter and egg until light and fluffy. Blend in the vanilla and almond extract. Sift together the flour, cocoa, baking powder and salt. Add to creamed mixture alternately with the milk. Mix well and stir in the oats. Drop by tablespoons on greased baking sheet. Bake in a 350 degree F oven for 12 to 15 minutes, cool on wire cake rack.

For today's activity, I'm asking you all to think about what recipes your family likes to make together. Since I'm stuck at home, I thought I'd make a recipe that reminds me of my family: My mom's famous chocolate chip cookies! You don't need to make a video, but I would love it if you would make an old family recipe or try out something new together. Write down your recipe and send it to me, so that I can put everyone's recipes together in a classroom cookbook! If you can send me a picture of you cooking together or of the finished project, I can include that in our book. Please try to have your recipes sent to me by Friday, April 6.

Healthy Banana Cookies
A recipe from my friend Lorraine - there is no flour or sugar in these cookies.
Three ripe bananas 2 cups rolled oats 1 cup dates chopped 1/3 cup vegetable oil 1 teaspoon vanilla
Preheat oven to 350°
Mix all ingredients well and let sit for 15 minutes. Drop by teaspoon full on ungreased cookie sheet. Bake 20 minutes or until lightly browned.

I've tweaked Maddi's recipe a bit, I could only find pumpkin pie filling (as opposed to pumpkin puree) and cut down on the sugar in the dough.
