1 c Sugar 2 tb Cornstarch 1/2 c Lemon juice Rind of 1 lemon, grated 1/2 c Butter 2 tb Brandy 1/4 ts Nutmeg or cinnamon 1/2 c Light rum 2 tb Dark rum Blend the sugar and cornstarch in 1 cup of boiling water. Cook stirring constantly over medium heat until the mixture begins to thicken. Add remaining ingredients and cook for 2 minutes, stirring constantly. Serve hot over mince pie, pound cake, or pudding. Mama Sue makes BREAD PUDDING WITH BUTTER RUM SAUCE.
Bread pudding is one of my favorite desserts. There are several restaurants near me that have Bread pudding on their menus and I always order. I asked a manager if he shared his recipe once and he said that he didn't (I understood). Later he came back to the table and said his secret is the sauce which was a Butter Rum sauce. I tried putting different recipes together and came up with this one which is very close in taste. It has more ingredients than I usually share but it's so worth it. It's not hard but does take time for the bread to soak up the milk mixture. Don't let the look of the ingredients keep you from trying it some time.
