How To make Rubio'S Fish Tacos
Ingredients

cod, or favorite whitefish fillets (1-1/2 oz ea)

tortillas, corn, as thick as possible, fresh
1
oil for deep frying
BEER BATTER:
1
cup
flour
1
cup
beer
1
garlic powder, to taste
1
pepper, to taste
WHITE SAUCE:
1/2
cup
mayonaise
1/2
cup
yogurt
SALSA:
1
each
garlic clove, peeled, minced

each
tomatoes, ripe, peeled, seeded, diced
1/2
each
onion, minced
2
tablespoon
cilantro leaves, chopped, stems removed
2
each
jalapeno chiles, seeded, chopped
1 1/2
teaspoon
salt
1/4
teaspoon
pepper
GARNISH:
1
each
cabbage, green, shredded
1
each
lime, cut into wedges
Directions:
Mix flour with favorite spices such as garlic powder, red or black ground pepper. Stir the flour mixture into the beer and mix until well blended.
Wash fish by dipping in cold, lightly salted water or water with a little bit of lemon juice added. Be sure fish is completely dry before dipping into batter.
Prepare salsa; reserve.
Put the vegetable oil into a deep skillet and bring to 375 F. Place fish in a single layer -do not let pieces touch each other. Cook fish until batter is crispy and golden brown.
Heat corn tortillas lightly in a skillet or Mexican comal until they are soft and hot.
To assemble, on each tortilla layer the fish fillet, white sauce, salsa and cabbage. Top it off with a squeeze of lime. Fold tortilla over to serve.

CRISPY BAJA FISH TACOS - even better than Rubio's
Crispy baja fish tacos at home and even better!
PROTIP: I tried making the fish tacos again after filming and I found they turned out even more crispy when I first coated the fish in the seasoned flour mixture. Then I added the club soda to the dry ingredients to make a batter and dipped the floured fish in and fried! This ensured a more dry fish surface which made them even more crispy.
RECIPE:
Lime Crema
1/2 cup Mexican crema or sour cream
1/3 cup mayonnaise
juice of half a lime
1/4 teaspoon garlic powder
Chipotle Sauce
3/4 cup mayonnaise
1/4 cup sour cream
juice of 1 lime
1/2 tablespoon honey
1/2 teaspoon black pepper
1/2 teaspoon chili powder
2 tablespoons adobo paste
chipotle peppers to taste pureed into a paste, to add spicyness
Fish and Batter
1 pound white fish, cut into 1 inch thick pieces
1 cup flour
1/4 cup cornstarch
1 teaspoon baking powder
1 1/2 tsp salt
1/2 teaspoon black pepper
1 teaspoon paprika
2 teaspoons chili powder
1/2 teaspoon garlic powder
1 1/4 cup club soda
vegetable oil, for frying

The Unknown Eater Jim Blankinship called Rubio's fish tacos the best in town, and at 99 cents, the best bargain. This is the original Rubio's in Pacific Beach on Mission Bay Drive. Owner Ralph Rubio told Jim that when they opened in 1983 there were only a couple of restaurants in town serving fish tacos. A San Diego State student, he was on spring break in San Felipe, Mexico when he tried a fish taco. So inspired, he opened this restaurant and called it the home of fish tacos. It caught on in San Diego and by 1987 he said there were at least 30 serving them. Customers Jim talked to were pleased--they're so good, I mean look at this beautiful taco I can't believe how big they are, how great they taste the greatest thing since sliced bread. In 2021 there are over 160 locations.

Best Fish Taco Sauce EVER - In Less than 5 minutes
Fish Taco's are made great with the sauce that gets up on top of them. This is a simple sauce that taste great on any type of fish taco and probably a lot more. Not only does it taste great, but it's super quick to make.
Ingredients:
1/2 cup of Mayo
1/2 cup of Sour Cream
2 tablespoons of diced adobe chilis in adobo sauce
2 tablespoons of lime juice
1/4 tsp of salt
1/2 tsp of garlic powder
Mix it up and ENJOY!!!!
