How To make Rotel N Rice Corn Soup
1 cn (10 oz) diced Rotel
-tomatoes, with liquid 1 1/2 c Cooked rice
1/2 pk Frozen corn
3 4 cups vegetable stock, or
-water ~
Optional:
2-3 corn tortillas, cut into 2 inch strips
1/2 red pepper, seeded and cut in strips
If using red pepper, saute at the bottom of a large soup pot, using a little bit of the broth. Add the tomatoes, cooked rice, corn, and stock to the pot, and heat thoroughly, about 10 minutes or so. Just before serving, stir in tortilla strips. (Note: I think the spiciness of the Rotel provides enough seasoning, but a little pepper, fresh cilantro, onion, etc. might be nice as well. Oh no, ya'll, this Zebra did cook without you. Recipe:
Southwestern Cheesy Corn Soup
4 ounce block of cream cheese cubed
1 medium green bell pepper chopped
1 medium onion chopped
small can of fire roasted tomatoes
1 can of rotel
2 cans of cream corn
1/4 block of Velveeta
1 T butter
3/4 cup milk or add more to increase quantity of soup.
seasoning: used in video or add your own.
On medium heat melt butter with chopped peppers, stirring and simmering for 5-7 minutes. Lower heat and add onions, stir to prevent scorching, add in milk & cream cheese. Simmer stirring often. Turn temp to 2 and add cubed Velveeta and creamed corn. After 10 minutes on low simmer turn heat to 4 and stir frequently to avoid scorching. Simmer slowly until cheese has melted & blended in. Serve topped with homemade croutons and french-fried onions.( optional)

Stale or outdated bread( avoid using the blue or green) ????.
I used my pizza cutter to cube white loaf bread and a lonely hotdog bun. Drizzle olive oil over bowl of cubed bread then sprinkle with garlic powder, parmeson cheese, Italian seasoning powder or powdered seasoning of your choice. (ie...Mrs. Dash...etc) Melt and drizzle on 1 stick of real butter. Coat crumbs well then transfer to a parchment covered cookie sheet. place in preheated oven (350°) for 10-15 minutes. Check to prevent burning. Delish with or without soup or salad.

1 teaspoon dried oregano
salt to taste

Crack 1 egg in the corn
Salt and black pepper
Add 1/3cup corn starch
Mix well
Pour olive oil in the pan
Add the corn mixture to the pan
Sprinkle 30g mozzarella cheese
Fry for 5 minutes on medium-low heat
Sprinkle green onion on top

Mexican Beef & Rice Casserole
1 Tbsp Olive Oil
1 1/2 lbs Ground Beef
1 Medium Onion - diced
3 - 4 Cloves Garlic - minced
1/3 C Taco Seasoning
1 Tbsp Tomato Paste
1 10 oz Can Rotel - Tomato & Green Chili's
1 C Fire Roasted Tomatoes
1 C Frozen Corn
1 15 oz Black Beans - drained & rinsed
1 Lime - juiced
Salt & Pepper to taste
1 1/2 C Rice
2 C Chicken Broth
2 C Cheddar/Monterey Jack Cheese - shredded
Garnish with
Scallions - Chopped Roma Tomatoes - Cilantro
In a large skillet drizzle olive oil, add onions cooking 2 - 3 minutes, add garlic cooking until fragrant.
Add chop meat and brown until no longer pink. Drain fat is needed.
Stir in taco seasoning until well blended, add tomato paste, rotel, fire roasted tomatoes, corn, black beans, salt & pepper & lime juice. Stir until all incorporated. Add chicken broth and rice. Cover and lower heat. Simmer for 20 - 25 minutes or until rice is tender.
Top with shredded cheese, cover and cook until cheese is melted.
Garnish with scallions, roma tomatoes & cilantro

Ingredients
4 tablespoons butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tablespoon AP flour
2 cups low sodium chicken or vegetable stock
1 tsp kosher salt
½ tsp black pepper
¼ tsp or ground nutmeg, optional
3 cups broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 cups half & half or milk or light or heavy cream
8 oz block grated cheddar cheese or 2 cups (mild, medium, or sharp )
Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in half & half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.
Serve with toasted crusty bread or in a bread bowl if desired.
