How To make Rotel Potatoes
1 cn (10 oz) diced Rotel
-tomatoes, with liquid 2 3 large potatoes
OPTIONAL:
Eggbeaters equivalent of 4 eggs 2-3 oz. lowfat or nonfat cheese
4-6 tortillas
Microwave or boil the potatoes until they are half-cooked; the flesh should still be firm, and not crumbly. Let them cool until you can comfortable handle them, and cut into bite-sized pieces. In a large skillet, dump the can of Rotel tomatoes and most of the juice, then add potatoes. Cook over medium heat, stirring occasionally, until most of the tomato liquid has been absorbed by the potatoes (this takes anywhere from 10 to 30 minutes, and is usually dependant on how hungry you are). Optional: If you want to add eggs at this point, make a crater in the center of the pan and add eggs. Stir the eggs over medium heat until eggs are scrambled. When they are just about done, mix thoroughly with the potato mixture. Serve with cheese (optional), either alone, or wrapped in steamed tortillas. With the eggs and cheese, this make a simple, spicy, and very filling breakfast. Other ideas I have yet to try: Stir in spinach, zucchini, mushrooms, and or onions with the potatoes. Rotel Cheese Dip Three Ways
This week we continue making tail gate goodies. This dip is a family fav around our house, any of these three ways!
1. Rotel Cheese Dip
2lb Block of Velveeta Cheese
2 cans Rotel Tomatos and Chiles (one mild, one original)
Melt cheese and rotel together, stir till combined and serve with your fav chips. We prefer corn chips.
2. Rotel Taco Cheese Dip
2lb Block of Velveeta Cheese
2 cans Rotel Tomatos and Chiles (one mild, one original)
1 lb of ground beef browned and drained (or sausage if you prefer)
1 pack of Taco seasoning
Melt cheese and rotel together, stir till combined. Brown the ground beef and add the taco seasoning as per the package. Mix the browned seasoned meat with the rotel cheese dip and serve.
3. Taco Potatoes
Rotel Cheese Dip (with or without the meat)
Baked Potatoes
1 lb ground beef
1 pkg taco seasoning
Bake your potatoes, brown the ground beef and season with taco seasoning. Once the potatoes are baked, cut open and top the potato with ground beef mixture and rotel dip. Serve

1 1/2 lbs. Ground beef 80/20
1 C. Chopped onions
1/4 C. Chopped green onions
1/2 C. Diced green bell pepper
1/2 C. Diced orange bell pepper
1 med/large diced tomato
3 med/large minced garlic cloves
2-2 1/2 tsp Seasoning Salt
3 Tbs All Purpose Flour
3/4 C. Beef broth
Tomato slices to top (i used 4 slices)
Pepper as needed
2 Large Russet potatoes (cut in half long way then sliced)
3 Tbsp cooking oil of your choice (to fry potatoes)
6 oz. Freshly grated Mozzarella Cheese or as needed
6 oz. Freshly grated white Sharp Cheddar Cheese or as needed
*BAKE 350 for 35-40 minutes…cover with foil if you wish so tomato doesn’t get mushy.
