Making Cheese Crisps with Brad
Going old school, Brad is making a family staple from our childhood in Arizona!
Cheese Crisp
Ingredients:
5-6 Flour Tortillas
1/4 cup oil for frying tortillas
2-3 cups grated/shredded cheese - use cheddar, Mexican blend, heck throw some feta on that bad dog!
Sour Cream
Salsa
Optional: Chorizo, left-over steak, carnitas, diced tomatoes, diced chicken, guacamole. diced green peppers, diced onions.
Directions:
Pre-heat oven to 375°
Heat oil and fry tortillas until crisp and golden.
Pile on the cheese and toppings of your choice.
Place topped tortillas on baking sheet, and bake 5 to 8 minutes until cheese is melted and bubbling.
Serve with Sour Cream, Guac & salsa... enjoy!

Queso Recipe:
32oz Block of velveeta
10oz Can of rotel
3/4 cup onion
3/4 cup green onion
8oz garden vegetable cream cheese
(Melt all ingredients on stove top over medium heat stirring frequently until everything is melted)

The Recipes:
DIY Oat Chez Powder
soy-free, gluten-free, oil-free
Makes about 2 cups
This is the vegan chez powder that you should always have on hand to make an impromptu
dinner, mix in a potato soup or just make a chez sauce to cover some steamed veggies.
Add in chili, chili powder, veggies - anything you want as you cook the sauce!
Ingredients
1 cup rolled oats
3⁄4 cup nutritional yeast
3 tablespoons chopped sun-dried tomatoes (not packed in oil, but still soft) or 1 tablespoon
tomato powder
1 teaspoon vegan lactic acid, optional
1 teaspoon salt or salt substitute, optional
1 teaspoon smoked paprika
1 teaspoon mustard powder
1⁄2 teaspoon granulated onion (or powder)
1⁄2 teaspoon granulated garlic (or powder)
1⁄2 teaspoon ground pepper
Instructions
Blend all ingredients until the mixture becomes a powder. Store in an airtight container.
Make an easy chez sauce by lightly toasting ¼ cup mix in a large saute pan on medium heat.
Then add about 1 cup of non-dairy milk, little by little, and turn the heat to high, whisking the
whole time.
Nut-Free Oat Vegan Queso
vegan queso made with rolled oats with salsa and chips
makes about 3 cups
If you are looking for a vegan queso that everyone can eat, you have found it! This is made with a based of gluten-free rolled oats, no nuts are used, and it's soy-free and oil-free too!
Ingredients
2 cups water
1 cup rolled oats
1/2 cup nutritional yeast
1/2 teaspoon organic cornstarch or arrowroot
1/2 teaspoon garlic powder
1/2 teaspoon salt or salt substitute
1/2 teaspoon jalapeno powder, optional but it makes it really good!
1/4 teaspoon onion powder
1/4 teaspoon lactic acid
Pinch dry mustard powder
Instructions
Blender Cooking Method:
Blend all ingredients until smooth. If you have a high-speed blender like a Vitamix or Blendtec continue blending until thick - listening for the sound to change as a sign it’s thick.
