Focaccia | Pastry Maestra
Focaccia is Italian flatbread, often topped with coarse salt, olives or cherry tomatoes. Its origin goes back to the Etruscans of North Central Italy prior to the Roman Empire forming, or in Ancient Greece at the beginning of the first millennium BC. Ancient Romans, Etruscans or Ancient Greeks were baking flatbread “panis focacius” on the hearth or on a heated tile.
Luckily, today, we have modern ovens so any excuses like I ran out of firewood, or It's raining and the wood is wet aren't gonna fly! Therefore, start your ovens and watch my video - I'll show you how to make super yummy focaccia!

How to Make Pan di Ramerino | Sweet Tuscan Rosemary & Raisin Buns
Italians really know how to make unique and tasty festive breads. From Christmas to Easter there are quite a few you can find on my channel and many more that I have yet to bake. This one may be the most unique when it comes to flavour. A sweet roll containing raisins and rosemary. When I first read about it, I was unsure, but once I tried it I loved it. The flavours work perfectly together.
Another background flavour is brought by a sweet red wine in which the raisins are soaked. This is optional and you can soak them in any other liquid you prefer. They don’t just taste great; they also have an amazingly soft texture thanks to being enriched and using a flying sponge pre-ferment. Finished with a shiny, sweet, and stickly glaze these buns will impress anyone this Easter.

Fabulous Foccacia Bread Recipe - with KitchenAid
Very excited to share with you this Foccacia recipe that I got from a pastry chef who generously shared her recipe with me after we kept asking for more of her lovely foccacia bread to wipe up our plates at her restaurant!
I baked this recipe with my new 6Qt (5.7L) KitchenAid stand mixer and the result was tremendous! I feel that it's a really good upgrade from my 5Qt KitchenAid stand mixer that I've been using for 11 years.
If you like foccacia bread, I'm sure you'll love this recipe. The crust is crisp and the inside is soft, pillowy and oh so flavourful!
Hope you give this recipe a try. Read the full recipe writeup here:
