Baked Rigatoni with 4-Cheese Sauce
Baked Rigatoni can be made numerous ways. This is a traditional Italian recipe I love! I start by making a béchamel sauce.
Béchamel;
-4 tablespoons unsalted butter
-1/4 cup all-purpose flour
-3 1/2 cups milk
-1/4 teaspoon nutmeg
-1/4 tsp. white pepper
-1/2 tsp. Kosher salt
Melt butter in a sauce pot on medium heat and whisk flour in to make a roux. Slowly pour in milk a little at a time to make sauce. Let the sauce cook until thickened. Be careful not to scorch. Whisk frequently. Season with nutmeg, white pepper and salt.
-Bring 4 to 6 quarts of water to a boil and cook 1 lb. desired pasta until al dente. Strain pasta in a colander and reserve. Do not rinse!
-Make a cheese mixture while the béchamel and pasta cools slightly.
*Cheese Mixture*
-1 pound ricotta cheese
-One egg
-1 cup shredded mozzarella
-1/4 cup grated Parmesan
-1/4 cup grated Romano
-1 tablespoon fresh chopped parsley
-Salt-and-pepper to taste
-mix all ingredients in a bowl
Preheat oven to 425°.
-you can make your own tomato basil sauce from scratch. I prefer to just buy a small jar unless I already have some on hand. You will only need 2 cups.
*Here's my Marinara Sauce recipe;
4 tablespoons olive oil
2 tablespoons butter
3 garlic cloves, minced
2 pounds fresh tomatoes, blanched and peeled, ground in a food processor or blender
1/3 cup chopped fresh parsley or basil
1 teaspoon dried oregano
Salt and ground black pepper
-Mix pasta, cheese mixture, béchamel and tomato basil sauce together in a large bowl. Place the pasta mixture in a seasoned baking pan and cover with plastic wrap and aluminum foil. Bake in oven for 30 minutes. Remove from oven and you can add a cup of Italian breadcrumbs on top and more cheese if desired! Place back in oven to brown bread crumbs and melt cheese. Remove from oven and let it sit 15 minutes or so to cool. Serve with your favorite Italian sauce!
This dish can also include ground beef, chicken, seafood such as crab meat, lobster...etc. Use your imagination!

Ingredients
▢1 lb lean ground beef
▢1 medium onion diced
▢1 tablespoon Italian seasoning
▢1 tablespoon minced garlic
▢1 teaspoon salt
▢1/4 teaspoon black pepper
▢5 cups tomato pasta sauce roughly 2 jars
▢500 grams Rigatoni pasta about 1 lb
▢2 cups shredded mozzarella cheese
Instructions
In a large saucepan, stir and cook ground beef and onion over medium heat until browned and onions have softened. Drain any juices released.
Add the Italian seasoning, garlic, salt and pepper and cook 1 minute.
Add the pasta sauce and cook, stirring occasionally, over medium heat, for 5 minutes. Set aside.
Meanwhile, bring a large pot of salted water to a rolling boil over high heat. Add rigatoni, reduce heat to medium-high, and cook just until al dente (it will continue to cook slightly in the oven).
Reserve ½ cup pasta water and drain pasta. Stir reserved pasta water into meat sauce.
Combine pasta and pasta sauce in saucepan. Pour into a lightly greased 9×13″ or similar baking dish.
Cover with a lightly greased piece of foil and bake at 350 degrees F for 20 minutes or until heated through.
**Optionally, cover and refrigerate up to 2 days. Bake at 350 degrees F until heated through, about 30-40 minutes.
Uncover and sprinkle with cheese. Bake an additional 10 minutes, until cheese has started to brown.

Ingredients
- 500g dried rigatoni
- 2 tbsp olive oil
- 1 onion, finely diced
- 3 cloves garlic, finely diced
- 1 long red chilli, finely diced
- 1 jar (550g) tomato passata
- 1 bunch basil, 1/2 picked
- 450 g of low-moisture grated mozzarella
Method
1. Start by cooking your rigatoni until it's just cooked, then drain it, and rinse it under cold water to stop the cooking.
2. Next, start making the sauce by heating the olive oil, up in a saucepan and sautéing the onions, garlic and chilli.
3. After 3 minutes, add your tomato sauce and stir well, once it starts simmering add half a bunch of basil still on the storks (this makes it easier to fish it out later).
4. Take a 20cm springform round cake pan and spread some of the sauce on the base.
5. Sprinkle a layer of mozzarella before arranging your rigatoni, standing at attention.
6. Once all the rigatoni is standing and nice and tight, pour over the rest of the tomato sauce.
7. Add a layer of picked basil leaves before topping it with mozzarella
8. Bake in a 180°c oven for 30 minutes or until golden brown on top
