Red Beans and Rice

Ingredients
Smoked Turkey Neck Stock:
2 pounds smoked turkey necks
Kosher salt
1 bay leaf
Red Beans and Rice:
2 tablespoons canola oil
3 stalks celery, chopped
1 large Spanish or white onion, chopped
1 bell pepper, chopped
1 teaspoon dried thyme
8 cloves garlic, finely chopped
2 bay leaves
2 pounds dark red kidney beans, soaked overnight and drained (see Cook's Note)
2 pounds smoked turkey sausage, sliced 1/4 inch thick
2 tablespoons Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons cayenne pepper
2 teaspoons ground cumin
2 teaspoons garlic powder or granulated garlic
3 cups cooked white or brown rice
1 bunch green onions (3 to 4 bulbs), sliced 1/4 inch-thick
1/2 cup chopped fresh flat-leaf parsley
Hot sauce, for serving
Garlic bread, for serving
Directions
For the smoked turkey neck stock: Place the smoked turkey necks and 2 tablespoons salt in a large pot. Cover with water and bring to a boil. Drain and return the turkey necks to the pot. Add the bay leaf and cover with 10 cups of water. Bring to a simmer, then keep warm while you prepare the red beans ingredients, 10 to 15 minutes. Remove the turkey necks and reserve the stock. Set both aside.
For the red beans: Heat the oil in an 8-quart heavy-bottomed pot over medium heat. Stir in the celery, onions and peppers and cook until the onions are translucent, about 3 minutes. Add the thyme, garlic and bay leaves and cook until fragrant, about 15 seconds. Add the red beans, smoked turkey sausage, Worcestershire sauce and the reserved turkey necks. Add enough turkey stock to fully cover the beans (about 8 cups) and reserve any remaining stock. Bring to a boil, then cover and reduce the heat to low. Cook, stirring occasionally to keep the beans from sticking, until the beans are tender, and the turkey necks are falling apart, about 1 hour 30 minutes. Uncover the pot, smash some of the beans on the side of the pot with the back of a large metal spoon to make them creamy, then cover and cook for 30 minutes more (see Cook’s Note).
Meanwhile, combine the cayenne, cumin, garlic powder, 1 tablespoon salt and 1 tablespoon pepper in a small bowl. Combine the green onions and parsley in a small bowl or on your cutting board. Stir the seasoning mixture into the finished beans, taste and adjust the seasoning as desired.
To serve, spoon the beans over a plate of cooked rice. Garnish with the green onions and parsley mixture, sprinkle with hot sauce to taste and serve with garlic bread.
Cook’s Note
To soak 2 pounds of dark red kidney beans, add them to a large bowl and fill with enough water to completely cover the beans. Cover with plastic wrap and refrigerate overnight. The beans will split when properly soaked. Drain before using.

⅛ tsp. ground Cayenne Red Pepper, or to taste
Freshly ground Black Pepper, to taste
6 to 7 cups Low Sodium Chicken Broth
2 Bay leaves
½ cup chopped Fresh Parsley plus more for garnish
Fresh Green Onions chopped, plus more for garnish
1 ½ cups Long Grain Rice

Authentic Louisiana Red Beans and Rice Recipe
Red beans and rice is a classic Louisiana meal. It's history dates way back and it is still a favorite now. This a traditional way of making red beans and rice.

Recipe:
Ingredients
- 1 tbsp (13 grams) of oil
- 1 lb (450 grams) of smoked sausage - (I used andouille but any smoked pork sausage will work)
- 2 ribs of celery
- 2 onions
- 1 green bell pepper
- 4 cloves garlic
- 1 lb or 450 grams Red Kidney beans (Camellia Brand from New Orleans but any red kidney bean will work)
- 1 tablespoon ( 30 grams) Creole seasoning
- 1 tsp (15 grams) Salt (taste and add more if needed)
- 1/4 tsp (1 Gram) Cayenne Pepper
- 2 Bay leaves
- 6-8 Cups (1400-1800 ml) water or chicken stock
- 1 ham hock, ham bone, or smoked turkey neck (optional)
1. The night before cooking, cover kidney beans in water and soak overnight. Rinse and drain when ready to cook.
2. Add oil to a large pat and heat over medium high until shimmering.
3. Add in sausage. Cook sausage until it starts to brown and bits start to stick to pot. Scrape bits from the bottom of the pot.
4. Add in onions, bell pepper, celery. Cook for about 8-10 minutes until vegetables turn soft and brown a little bit.
5. Add in garlic and cook for 1-2 minutes.
6. Add in beans and stir to combine
7. Add in water or stock until beans are covered. Then creole seasoning, cayenne pepper, bay leaf, and ham hock.
8. Bring to a boil from 5 minutes and stir. Then drop heat to low and simmer for 2.5-3 hours.
9. Once beans are tender should be very tender. At this point, smash some of the beans on the side of the pot. Scrape beans from the side of the pot and stir to combine. (This will make the sauce extra thick and create the ideal red beans and rice consistency.)
10. Remove ham hock and bay leaf.
11. Serve over rice and enjoy.

Cajun Style Red Beans and Rice with Grilled Andouille Sausage
Red Beans and Rice Ingredients:
- 1lb red beans
- 1 smoked ham bone
- 32oz chicken stock
- 16oz water (add more as needed)
- 1 bell pepper
- 1 onion
- 2 celery ribs
- 4 cloves garlic
- 1 lb andouille sausage
- 1 lb smoked sausage
- 2 Tablespoons Malcom’s King Craw Cajun Seasoning (or your favorite Cajun seasoning)
- 1 cup dry long grain rice
Red Beans and Rice Directions:
1. Pick and rinse red beans. Place beans in large pot and add stock, water, and 1/2 chopped onion. Bring pot to boil and reduce heat to simmer. Cook for 1 hour 30 minutes adding water as necessary. Stir beans every 20-30 minutes
2. Dice onion, bell pepper, and celery; mince garlic; split sausages length wise.
3. Grill sausages over charcoal grill. Slice andouille into 1/2 moon shape slices.
4. Sauté vegetables in 1 Tablespoon olive oil for 3-5 minutes. Add garlic and cook for 1-2 minutes.
5. When beans are tender remove 1 cup of beans and mash with fork.
6. Add vegetables, sliced andouille sausage, and mashed beans to the pot. Season with Malcom's King Craw. Simmer for 30 minutes.
7. Prepare rice according to package directions.
8. Serve red beans over a scoop of rice garnished with a link of smoked sausage, green onion, and hot sauce.
