How To make Rice Flour& Yogurt Pancakes
2/3 c Brown rice flour
1/3 c Cornstarch
1 tb Sugar
1 t Baking powder
pn Salt 1 lg Egg
2 tb Vegetable oil
1/2 c Plain low-fat yogurt
1/2 c Low-fat milk
Sift rice flour, cornstarch, sugar, baking powder and salt into a large bowl.mix egg with oil and yogurt; stir in milk. Pour liquid ingredients over dry ingredients and mix until just blended. Heat a non-stick skillet over medium heat. Pour batter by tablespoonfuls into the dry pan. Cook pancakes until golden brown on both sides, 2 minutes or less. Stack on warm plates. Serve with butter and preserves, or honey. Makes 26 pancakes, 2 3/4 inches in diameter. NOTE: If making pancakes for 1 or 2, reserve the remainder of the dry and liquid ingredients separately and combine just before cooking. If refrigerated, the flour mixture will keep for weeks, the liquid mixture for 3 days. PER 2 PANCAKES: 75 calories, 2 g protein, 11 g carbohydrate, 3 g fat (1 g saturated), 18 mg cholesterol, 62 mg sodium, 0 g fiber. dry ingredients:
- 0.5 cup flour
- 0.5 cup glutinous rice flour (I used Mochiko brand)
- 1 TBS sugar
- 0.5 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 1 egg (separate your yolk & white)
- 0.5 cup plain Greek yogurt
- 0.5 cup milk (I used soy)
- 2 TBS melted butter
- 2 TSP vanilla (I used clear vanilla)
directions:
- mix all your dry ingredients together
- add in your wet ingredients except the egg white, and mix thoroughly
- add in the egg white, combine but don’t over mix
- cook in a non-stick pan on low-medium heat
- top with maple-syrup, and share with someone you love. or eat them all yourself. they’re so good

PANCAKE CON RISO SOFFIATO ALLA FRAGOLA ????????
Ingredienti per 2 pancake:
1 uovo intero
1 albume
40 gr di farina 00
Riso soffiato alla fragola qb
Miele millefiori qb
Fragole qb
Procedimento:
Uniamo l’uovo con l’albume e montiamo per circa 5 minuti o comunque fino a che non otteniamo un composto spumoso.
In una ciotola capiente mettiamo la farina e verso sopra le uova montate.
Amalgamiamo dal basso verso l'alto facendo attenzione a non smontare il composto.
Scaldiamo un pentolino e cospargiamo con del riso soffiato poi versiamo sopra due cucchiai di impasto. Copriamo con un coperchio e lascio cuocere per 2 minuti a fiamma bassa poi giriamo e continuiamo la cottura senza coperchio per un altro minuto.
Serviamo con delle fragole cresce e miele.
