How To make Vegetable Rice Pancakes
3 c Cooked brown rice
1 c Grated carrots
1/2 c Finely chopped onions
1/4 c Snipped fresh parsley
1 Garlic clove; minced
1 ts Salt
1/4 ts Ground black pepper
2 Eggs; beaten
1/2 c Whole wheat flour
-OR- all-purpose flour 1/4 c Vegetable oil
Combine all ingredients except oil. Form into 12 thin patties, pressing firmly with hands. In large skillet, cook patties in heated oil until brown, turning once. Serve with dairy sour cream or yogurt, if desired. Each serving provides: * 243 calories * 5.7 g. protein * 11.6 g. fat * 29.6 g. carbohydrate * 390 mg. sodium * 91 mg. cholesterol NOTE: Optional ingredients are omitted from the nutritional calculations. Rice - 1 Cup (4 hours or Overnight Soaked)
Boiled Potatoes - 2 medium
Green Chillies -2 (Chopped)
Grated Ginger - 1 tspn
Cumin(Jeera) - 1/2 tspn
Curry leaves - 1 tspn (Chopped)
Salt as per taste
Capsicum Chopped - 1/4 Cup
Carrot Grated - 1/4 Cup
Onion - 1 small(Finely Chopped)
Tomato - 1 small (Chopped)
Chopped Coriandar leaves - 2 tspns
Curd - 1/4 Cup
Baking soda(Eno fruit salt ) - 1/2 tspn

Here is my mother-in-law making a rice pancake with her bare hands on a hot pan. This is a traditional village bread or pancake. This dosa kind of pancake is made from a coarse rice flour which makes is super crispy. It is eaten with eggs or a prawn pickle. It is one of my favourite things to eat and it crashes my diet. I tried making it a couple of times but then it doesn't come out that thin. It's no easy feat. It is lightly salted and can be eaten with with some ghee too.

Rice pancakes or veggie pancakes are a healthy gluten-free breakfast option with very little oil and loads of veggies. Any type of rice can be used to make these pancakes, to make it more healthy you can even use Brown Rice; soak the brown rice a little longer as it needs more time to cook compared to white ones. Add vegetables as per your choice and taste. These pancakes keep you fuller for a longer time…enjoy and don’t forget to share your feedback.
Ingredients-
Rice (Any rice) -1 cup (Soaked for 3-4 hours)
Green chili -2
Boiled and grated potatoes -2
Chopped veggies –
Tomato -1tbsp
Carrots -1tbsp
Capsicum -1tbsp
Onion -1tbsp
Coriander leaves -1tbsp
Cumin Seeds -1tsp
Grated ginger -1tsp
Red chili flakes -1tsp
Salt -as per taste
Baking soda/fruit salt -1/2tsp
Oil for shallow frying
Method –
1-Blend the soaked rice to a coarse paste. Add little water while blending, the batter should not be thin.
2-Add the grated potatoes and all the chopped veggies. Mix well. After adding veggies the batter will become thick.
3-Mix cumin seeds, grated ginger, salt, red chili flakes, and baking soda. Mix well and the batter is ready.
4-Heat a non-stick pan/Tawa, sprinkle some oil. Spread a ladle full of batter, cover, and cook for 1-2 minutes.
5-Flip it gently, sprinkle some oil on sides. Cover and cook for 1-2 minutes again. Till the pancake is golden and crisp.
6-Serve it hot with the dip of your choice.
