How To make Rice Flour and Yogurt Pancakes
2/3 c Brown rice flour
1/3 c Cornstarch
1 tb Sugar
1 ts Baking powder
pn Salt 1 lg Egg
2 tb Vegetable oil
1/2 c Plain low-fat yogurt
1/2 c Low-fat milk
Sift rice flour, cornstarch, sugar, baking powder and salt into a large bowl.mix egg with oil and yogurt; stir in milk. Pour liquid ingredients over dry ingredients and mix until just blended. Heat a non-stick skillet over medium heat. Pour batter by tablespoonfuls into the dry pan. Cook pancakes until golden brown on both sides, 2 minutes or less. Stack on warm plates. Serve with butter and preserves, or honey. Makes 26 pancakes, 2 3/4 inches in diameter. NOTE: If making pancakes for 1 or 2, reserve the remainder of the dry and liquid ingredients separately and combine just before cooking. If refrigerated, the flour mixture will keep for weeks, the liquid mixture for 3 days. PER 2 PANCAKES: 75 calories, 2 g protein, 11 g carbohydrate, 3 g fat (1 g saturated), 18 mg cholesterol, 62 mg sodium, 0 g fiber. Ingredients
1 cup all purpose flour
1 cup milk
3 tablespoon sugar
2 medium eggs
1/4 tsp. salt
1/2 tsp. vanilla extract (optional)
DIRECTIONS
For the pancake batter, add the all-purpose flour, white sugar, salt in a large mixing bowl. Mix well using a wire whisk.
On the same bowl, add the milk and the vanilla extract. Mix until smooth and well-blended. Set the mixture aside.
Grab two eggs and separate the egg whites from the egg yolks. Place the egg yolks in the pancake batter and put the egg whites in a separate bowl.
Mix the egg yolks with the pancake batter.
Beat the egg whites using a hand mixer until you reach stiff peaks.
Gradually add the stiff egg whites into the pancake batter and fold gently. Mix until smooth and well-blended.
Heat a pan under low heat. Grease the pan with some oil or butter.
Pour some pancake batter into the pan gently to form a circle. Cook the pancake until bubbles form on the top. Flip the pancake to cook the other side.
Transfer the pancakes in a serving plate. Top with butter and enjoy with your favourite syrup.

20ml (4 tsp) Milk
30g (3.3 tbsp) All-purpose flour

I make a low calorie and Gluten Free Fluffy Pancakes Today, sugar is less and its really good in taste.
In fact after i took a picture of this Pancakes, my kids eat all, and they say more Please. ( ,).
I did not use oil for fry pan ,we need a Fry pan that is Teflon or you can put oil if you dont have.
