Baking dish: Le Creuset cast iron roaster 5.25 qt ( 11.7’’x 16.8’’ ) :
✾ Cook the meat
3 lbs beef chuck roast, boneless
Salt and back pepper to taste : and
3 TBSP avocado oil :
12 cups water
✾ Aromatics for broth
1/2 medium white onion
1 ea head garlic
3 ea bay leaves :
1 tsp Mexican oregano, dry :
1 tsp all spice, whole :
2 tsp kosher salt
✾ For the sauce
8 ea chiles guajillos, dry :
2 ea ancho chiles, dry :
4 ea puya chiles, dry :
3 cups hot broth
1/2 cup water (swirl in blender)
4 ea garlic cloves, peeled
1 1/2 tsp onion powder :
1/2 tsp whole cumin :
2 TBSP avocado oil, to fry the sauce
1/4 ea medium white onion, sliced
Salt to taste, 1 1/2 tsp salt, kosher
✾ Corn husk
25 ea corn husk :
✾ Masa/corn masa dough
8 cups corn masa harina, instant

Perfect Green Bean Casserole Recipe | Cooking With Keith
This is the best green bean casserole recipe ever! Bring this green bean casserole to any thanksgiving event and it will impress the masses or save it for a potluck, either way people will be talking about it. This recipe is so yummy! Don't be fooled by the taste this recipe is plant based.
Ingredients:
Boiling Green Beans
3 Pounds Green Beans
2 Tbs Salt
1/2 Tsp Thyme
Canola Oil Spray
Gravy
4 Boxes of Mushrooms
5-6 Cloves Garlic
1 Onion
1 Tbs Olive Oil
1 Tsp Oregano
1 Tsp Sage
1 Tsp Thyme
1 Tbs Red Wine
1/2 Cup Nutritional Yeast
2 Tbs Soy Sauce
1/2 Cup Flour
2 Cups Vegetable Broth
3 Cups Soy Milk
3 Tbs Tofutti Better then Cream Cheese
3 Cans Sliced Olives
Onion Topping
3 Slices of Bread
2 Tbs Vegan Margarine
1/4 Tsp Salt
Dash of Black Pepper
6 oz Can French Fried Onion
3 Cloves Garlic
Directions:
Green Bean Prep:
1. Bring a large pot of water to a boil.
2. Break off tips of green beans and then break them in half.
3. Add salt, thyme, and green beans to boiling pot.
4. Strain green beans when soft and add to casserole dish that has been sprayed with canola oil.
Gravy Prep:
5. Cut up onion and garlic, place into sauce pan and drizzle some olive oil into sauce pan.
6. place sauce pan on medium heat until garlic and onion become soft.
7. Cut up mushrooms into pieces.
8. Add mushrooms, thyme, oregano, sage, and thyme to sauce pan. Cook Until mushrooms release juices.
9. Add vegetable broth, soy sauce, and red wine to a bowl and then mix.
10. Add flour to the vegetable, soy sauce, and red wine bowl. Mix together until there are no flour chunks.
11. Add flour broth blend to sauce pan and stir until thick.
12. Add olives to sauce pan
13. Add soy milk, 1/2 cup nutritional yeast, and vegan cream cheese to a bowl. Add bowl to sauce pan and stir until it thickens.
Onion Topping Prep:
14. Preheat oven to 375.
15. Add Bread, vegan margarine, salt, black pepper, garlic, and french fried onions to a food processor. Blend until all the contents has been mixed.
16. Add sauce to casserole dish and mix until sauce has covered all the green beans.
17. Evenly place onion topping on top of the casserole dish.
18. Cover casserole dish with aluminum foil.
19. Place in oven for 25 minutes
20. Remove and let cool.
21. Dig in!

Amy Roloff Making Hash Browns Egg Casserole – Anytime for a few or a crowd
I love having family and friends visit and even more so when they stay awhile and are here the next morning. This is a great breakfast/brunch recipe to feed a few or even better, a crowd. With a little prep you can make it the night before and be ready to bake it in the morning. And feel free to have this any time of day. Why not.
I know breakfasts are often rushed and you’re lucky to get a bagel with cream cheese and a cup of coffee before you have to go let alone a hearty breakfast. What is wonderful about this is that you can make this the night before. The next morning just take it out of the refrigerator and rest for about 30 minutes before baking it. This is hearty, scrumptious and full of good things to wake up to in the morning.
And the other benefit, this is a dish you can completely make your own by adding in whatever meat, veggies and cheese you want. You probably already have most of the ingredients as well. No matter how many times you make it you’ll always find another way to make it new again. I love a recipe that has so much variety and versatility in what you can put in it.
After you bake it, now you can enjoy a hot breakfast and relax with family and friends the rest of the morning.
Ingredients:
1-2 Tbsp Butter or Olive Oil
½ pound of your favorite Sausage (I used mild Italian)
1 small or ½ large Red Pepper, diced
1/3 cup of Onion diced
1/3 cup Parsley, chopped
1 tsp Hot Paprika
1 large Garlic clove, minced
Salt and Pepper
About 4-6 small White or Yukon Potatoes, grated or 1 pound Frozen Hash Browns
(I grated the potatoes)
5 -6 large eggs
1/3 cup Cream
½ cup of milk
1 cup Cheese (I used sharp Cheddar Cheese) leave a little extra for topping just before taking the casserole out of the oven.
Chives – for garnish
Directions:
* Preheat the oven 375 degrees. Grease baking dish, I used a medium baking dish
* Heat butter in a sauté pan and cook onions and pepper with a little salt and pepper and cook until vegetables are tender. Add in garlic and stir for about 1 minute. Remove and place vegetables in a bowl.
* Optional, heat sauté pan and lightly brown hash browns on one side and then fold over and brown the other. Add Salt and Pepper. Remove from the pan.
* In a sauté pan, cook the sausage till done.
* In a baking dish, layer the potatoes first, sprinkle a little cheese and add in sausage and vegetables.
* In a bowl, add eggs and the cream and milk and Salt and Pepper. Whisk together. Pour over the potato sausage vegetable mixture.
* In a medium baking dish, Bake for about 40-45 minutes until lightly brown on top and knife inserted comes out clean. Don’t over bake or it may come out a little ‘dry’.
Optional – just before finishing baking, add a little more cheese on top and bake till melted.
The mixture is done when a knife or toothpick inserted comes out clean. Top with
chives.
* Serve and Enjoy.

Meat – Sausage, Ham, Bacon, Turkey sausage or bacon
Vegetables – Red, Green and/or Yellow Peppers, Onion, Mushrooms, Spinach, Wilted Kale, Green Onions, Zucchini, Butternut Squash
Cheeses - Cheddar Cheese (mild, medium, sharp), Provolone, Feta, Mozzarella, Pepper Jack (a little spice)
Herbs/Spice – Italian seasonings, Thyme, Chives, Parsley, Paprika (hot or smoked), Garlic, Nutmeg, red pepper flakes
