These cookies have the perfect chewy cookie texture and are packed with flavor - chocolatey with a bourbon caramel drizzle that has a subtle spice. They will have your friends and family question how homemade cookies can be this delectable!

Lauren’s baking tip: No bourbon? No problem! These decadent holiday cookies are still delicious without alcohol in the caramel.
Ingredients
2/3 cup Unsalted Butter
1 cup Semi-Sweet Chocolate Chips (or 1 cup Roughly Chopped Semi-Sweet Chocolate)
1 1/2 cups All-Purpose Flour (200 grams)
1 tsp Pumpkin Pie Spice (optional)
1/4 cup Unsweetened Cocoa Powder
1/2 tsp Salt
1/4 tsp Baking Powder
3/4 cup Brown Sugar, lightly packed
1/4 cup Granulated Sugar
2 Large Eggs
1 tsp Vanilla Extract
3/4 cup Chopped Walnuts
Sea Salt Flakes (to taste)
2 Tbsp Whipping Cream
Quick Bourbon Caramel
30 Caramel Candies (unwrapped)
1/4 cup Bourbon

Peanut Butter Brownie Cookies
Here is what you'll need!
Servings: 24

INGREDIENTS
1 box brownie mix
1 egg
¼ cup butter, melted
4 ounces cream cheese, softened
3/4 cup creamy peanut butter
3/4 cup powdered sugar
6 ounces chocolate, melted
PREPARATION
1. Preheat the oven to 350˚F / 175˚C.
2. In a large bowl, combine brownie mix, egg, melted butter, cream cheese until dough forms.
3. Scoop the dough onto a cookie sheet and bake for 10-12 minutes.
4. Mix peanut butter and powdered sugar into dough. Form one inch balls from the dough and place each peanut butter ball into the center of each baked cookie. There should be roughly 24 balls for 24 cookies.
5. Transfer the cookies to a wire rack and let cool completely.
6. Melt chocolate in a microwavable bowl for 30 seconds, stir, then melt for an additional 15 seconds and stir until the chocolate is completely melted.
7. Spoon the melted chocolate over the peanut butter balls, let the chocolate set, then enjoy!

Pay attention to egg whipping level, accurate ingredients measurement, consistency and temperature of the batter, you can make beautiful cracked appearance like brownie, with glossy smooth surface on non-cracked area. This recipe use 54% dark Couverture chocolate, the overall sweetness is just right. After baking, the whole kitchen is full of chocolate aroma. Eat warm, crispy cookie outside, soft brownie texture inside, paired with cold milk, bittersweet rich chocolate and crunchy walnuts/pecans, the perfect taste.
Storage Method: Best eaten warm right after baked. Bake and completely, store in airtight container at room temperature for 5-7 days.
