Ingredients for making Upside Down one pan pizza at home:
1 cup warm water
1 1/2 tsp yeast
2 tsp sugar
2 cups all-purpose flour
2 tsp salt
5 tbsp olive oil
1 onion, thinly sliced
1/2 cup pepperoni, sliced
1 green bell pepper, sliced into rings
3/4 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese
1 cup pizza sauce
Instructions for making Upside Down no-oven one pan pizza:
- First in a large bowl, add all the following ingredients
- You warm water, yeast and sugar
- Now whisk everything together
- You can now add your all-purpose flour to the bowl
- Also add you salt and olive oil
- With a spatula mix everything together
- Sprinkle your countertop with flour
- Knead your dough forming a pizza dough ball
- Now in a separate bowl, grease the bowl with olive oil
- Add your pizza dough in and cover with saran wrap
- Let the dough rise for 30 minutes
- Now in a pan add some olive oil
- Add your thinly sliced onion and caramelize them
- In a fresh pan add some olive oil
- Now line the bottom of the pan with your pepperoni
- Add your green pepper slices on top
- Then add your caramelized onions
- Now add on your grated parmesan cheese
- You can now add your pizza sauce
- Now add the pizza dough you made earlier to the top of the upside down pizza
- Bake at 400°F for 25 minutes
- Now carefully flip your pizza out of the pan and onto a baking sheet
- Place the baking sheet in the oven and bake at 350°F for 25-30 minutes
- And voila your upside down pizza is now ready to serve

Upside-Down Pizza Casserole

Here's what you'll need!
DEEP DISH PIZZA
Servings: 8
INGREDIENTS:
Dough
1¼ cup warm water
2¼ teaspoon active dry yeast
2 teaspoons sugar
3¼ cups flour
¾ cup cornmeal
2 teaspoons salt
2 tablespoons butter, melted
1 tablespoon olive oil
Sauce
2 tablespoons butter
1 onion, diced
1 teaspoon salt
1 teaspoon crushed red pepper
1 teaspoon oregano
2 cloves of garlic, chopped
1 teaspoon sugar
1 28-ounce can of crushed tomatoes with basil
10 slices mozzarella
½ pound Italian sausage
Fresh grated Parmesan
PREPARATION
1. For the pizza sauce, melt the butter in a small saucepan and add the onion, salt, red pepper flakes, and oregano, and sauté until golden brown.
2. Add the garlic, sugar, and crushed tomatoes, and simmer for roughly 20 minutes or until sauce thickens.
3. For the dough, combine the active dry yeast, sugar, and warm water together and let sit for one minute.
4. In a large mixing bowl, combine the flour, cornmeal, and salt.
5. Add the yeast mixture and butter into the dry ingredients and stir until dough forms.
6. Bring dough to floured surface and knead until dough forms into a ball.
7. Move dough to large bowl drizzled with olive oil. Coat dough in oil and cover and let rest for 1 hour.
8. Remove dough and bring onto floured surface.
9. Cut dough in half and begin working dough out ensuring that it is at least 2 inches wider than your deep dish pan. Double wrap the remaining dough with plastic wrap and place in a resealable freezer bag. Freeze for up to a month.
10. Preheat your oven to 425°F/215°C.
11. Bring your dough into your oiled and floured deep dish pan.
12. Using your hands press dough into sides of your dish making it as even as possible.
13. Lay slices of mozzarella across the dough, covering the entire bottom.
14. Add pieces of uncased Italian sausage on top of the mozzarella and top with tomato sauce.
15. Bake for 20-25 minutes or until crust starts to lightly brown and the cheese is melted.
16. Garnish with Parmesan.
17. Enjoy!

SAUCE
• 28oz can crushed tomatoes
• 7g or 1 1/4tsp salt
• 10g or 2 1/3tsp sugar
• 1/2 tsp black pepper
• 1 tsp dried oregano
• 1/2 tsp Chile flake
• 1 tsp dried basil
• 50g tomato paste
• 25ish or 2-3tbsp olive oil
• 15g/2 large cloves garlic, minced
Add all ingredients except oil and garlic into a high sided container and mix with immersion blender under larger herbs are broken down. Preheat medium sauté pan over med heat. Add oil and garlic into pan. Sauté to soften garlic. Add sauce puree. Reduce to low and simmer for about 20min until reduced and dragging spoon through leaves a trail.

DOUGH:
• 285g or 1 1/4c warm water (86F/30C)
• 7g or or 2 1/4tsp instant yeast (about a packet)
• 20g or 1 1/2tbsp olive oil
• 425g or 3 3/8c ap flour (11.7% protein) or bread flour
• 8g 1 1/2 tsp salt
• olive oil
Add ingredients into the bowl of stand mixer with dough hook attachment and mix on low for 3 minutes or until dough forms into a messy ball. Increase speed to high and continue to mix for about 6min. Transfer dough to well oiled rectangular container, cover, and allow to rise at room temp for 30min. Fold strength into dough as shown @1:59. Cover and allow to rise again at room temp for 30min. Repeat strength building fold @2:34. Cover and allow to rise for yet another 30 minutes.
Very liberally oil sheet pan, making sure to spread into corners and up the sides. I usually use at least 30ml or 2-3Tbsp. Flip dough onto sheet tray. Spread dough out into rectangular shape. Cover and let rest for 15-20min. After that first rest, continue stretching dough out into the pan. Degas, grab edges, and stretch edge to edge. Cover and allow to relax for 15 minutes. At this point, you should be able to stretch dough the rest of the way to fill the sheet pan. Cover one last time and allow to proof for about 15 minutes. Preheat oven to 550F/288C with pizza stone or steel placed on the lower 1/3 rack.

PIZZA BUILD:
• Sliced full fat mozzarella (about 12 slices for 1 pizza)
• Fresh mozzarella (10-12 chunks)
• Thinly sliced pepperonis
• Grated parmesan
Cover dough edge to edge with slices of mozz. Spoon sauce in large dollops down in two rows on the pizza, then spread slightly, leaving some cheese exposed. Add 10-12 fresh mozz chunks. Sprinkle with grated parm. Bake directly on pizza steel or stone for 18-20 min or to your desired doneness. Rotate 180 degrees halfway through cooking.

Upside Down Pizza
One Pan Upside Down Pizza
If you don’t have a pizza oven, this untraditional pizza only uses one pan and is cooked in a traditional oven — plus you can also get creative with the topping options too!
Here’s what I used:
- 1 Green Bell Pepper
- 1 Yellow Onion
- Pepperoni
- Spicy Calabrese
- 1/2 cup Parmesan
- 12 oz Shredded Mozzarella
- 12 oz Pizza Sauce
- 300g Overnight Pizza Dough
Pre-heat the oven to 400 degrees
Meanwhile, using a 12-14 inch skillet — over medium heat start by cooking the bell peppers for about 2 minutes per side then remove and set aside. Next, cook the onions until fragrant and softened and set aside
Turn off the heat, liberally oil the pan then arrange the pepperoni and calabrese on the bottom of the skillet. Follow that with the bell peppers, then onions, parmesan, mozzarella, pizza sauce then cover with the pizza dough and brush with olive oil
Place in the oven for 25-30 minutes or until the pizza dough is golden brown. Carefully place a baking sheet over the top of the skillet and flip quickly — may need a second set of hands (probably easier to do)
Place back in the oven for another 5-10 minutes at 450 degrees or until pepperoni is crispy
