How To make Pressed Bean Curd Soup
1 lb Pressed bean curd, slivered
Cooking oil 4 ea Green onions, sliced
1 c Green peas
1 c Chopped tomatoes
1/2 c Sweet corn
2 tb Soy sauce
2 tb Dry sherry
1 ts Brown sugar
2 ts Salt
1 tb Sesame oil
1 l Stock or water
Heat 4 tb cooking oil in a wok or pan & fry bean curd till golden. Remove & drain. Fry green onion for 30 seconds, add the rest of the vegetables & fry for another 1 minute. Add remaining ingredients except stock & mix well. Transfer to a soup pot. Add stock, gently stir & heat. Serve hot. Jack Santa Maria, "Chinese Vegetarian Cookery"

Tofu, also known as bean curd, is a food prepared by coagulating soy milk and then pressing the resulting curds into solid white blocks of varying softness. Beyond these broad categories, there are many varieties of tofu. It has a subtle flavor, so it can be used in savory and sweet dishes. It is often seasoned or marinated to suit the dish and its flavors, and due to its spongy texture, it absorbs flavors well.
Nutritionally, tofu is low in calories, while containing a relatively large amount of protein. It is high in iron and can have a high calcium or magnesium content depending on the coagulants (e.g. calcium chloride, calcium sulfate, magnesium sulfate) used in manufacturing.
Tofu originated in China and has been consumed within China for over 2,000 years. It is also a traditional component of the cuisines of Indonesia, Japan, Korea, Vietnam, Singapore, Thailand, and the Philippines. In modern Western cooking, it is sometimes treated as a meat substitute.

• 1 pkg Five Spiced Pressed Tofu, thin sliced
• 1/2# pork loin or shoulder, shredded
• 4 oz Chinese chives, cut 2 sections
• 1/2 sm yellow onion, sliced
• 4 cloves garlic, sliced
• 2 green onions, cut 2 sections
• 1 Tbsp Shaoxing wine
• 1 Tbsp sesame oil
• 1/2 Tsp dark soy
• 1/2 Tsp white pepper

• Oil for cooking
