How To make Prawn and Mango Curry

This simple Indian curry is a good example of green mango use. To 50 g desiccated coconut add just enough boiling water to moisten, stir and set aside (or use 70 g fresh coconut). Peel 800 g green prawns and devein them. Peel two green mangoes and cut the flesh into 2 cm cubes. Into the bowl of a food processor put 3 birdseye chillies (or less to taste), a tablespoon of ground coriander and the coconut. Process to a paste. Peel and slice 2 onions. Chop half a bunch of fresh coriander. In a saucepan, heat 2 tablespoons of oil and fry the onions gently until they are transparent. Add 2 or 3 fresh or dried curry leaves and the coconut paste and continue frying over a low heat, stirring occasionally, for about 10 minutes. Add 500 mL water. salt to taste, half a tablespoon of turmeric, the mango and simmer for 10 minutes. Add half a cup of thick coconut milk and the prawns and cook for a further few minutes, just until the prawns turn pink. Remove to a serving dish, scatter the chopped coriander leaves over the top an serve with rice. Makes 4 to 5 servings. From "Raw Materials" by Meryl Constance, Sydney Morning Herald 1/12/93.

PARAGON Style prawns Mango Curry
Fish curry with raw mangoes and coconut milk
*Ingredients*
Prawns-600 g
Coconut milk (of 1 coconut)
Onion (medium)-1
Raw mango-1
Tomato(big)-1
Chilli-5/6 (as per spice requirement)
Shallots-15
Coriander powder-1 tablespoon
Chilli powder-1/2 tablespoon
Turmeric powder-1/4 tablespoon
Ginger paste-1 tablespoon
Garlic paste-1 tablespoon
Fennel
Fenugreek
Ginger n garlic chopped- 1/4 table spoon each
Coriander leaves and curry leaves chopped
*Recipe*
-Pour 2 tablespoon coconut oil to heated pan
-Add a pinch each of fenugreek and fennel seeds wait till it cracks
-Add the shallots and ginger garlic paste wait till it cooks
-Add onion,chilli,salt,chopped ginger garlic ,tomato and little coriander leaves
-Add spices in low flame
-Add Prawns ,half of raw mango and a cup of water
-Cook in simmer for about 20 minutes(until prawns are cooked)
-Add rest of raw mango
-Add coconut milk and wait till small bubbles appear in the sides
-Finally add curry leaves and coriander leaves

Goan Prawns Curry with Raw Mango is a delicious Indian prawn curry recipe in which prawns are cooked in a mildly spiced coconut curry to which raw mangoes are added. The prawn coconut curry tastes sour and spicy due to the addition of green mango. This mango prawn curry is served with rice and fried fish for lunch or dinner in the small Indian state – Goa.
Ingredients
15-20 Prawns / Shrimps
1 raw mango
1/2 chopped onion
1 green chilli, slit
For Gravy:
1/2 cup grated coconut (coconut of small size)
1 marble sized ball of tamarind
1 teaspoon turmeric powder
2-3 dry red chilies / byadgi chilies / shepda in Konkani / Kashmiri red chilies
5 black peppercorns
1/2 teaspoon coriander seeds
For marinating the prawns:
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon Salt
