Today I’m going to be sharing with you how To Make The easiest and most delicious pozole rojo, a family’s recipe that hadas stayed with us for many years! Original recipe here it’s just perfect to enjoy all year around! But specially durning caldo season, my favorite season of them all!

Allow meat to be at room temperature this helps the meat be more juicy and cooks evenly and if you prefer to boil the meat, here is how
Ingredients:
For the meat:
4-5 lbs pork shoulder and 2 lbs ribs seasoned with 2 1/2 tbsp salt and 1 tbsp black pepper
110 oz hominy- my favorite brand is Juanitas
For the sauce:
20-25 new mexico/ chile guajillo pods
5 chile de árbol
3 chile pasilla
8 garlic cloves
2 bay leaves
2 thyme springs
1/2 onion
4 tsp chicken bouillon
1 tsp oregano plus 1 tbsp
1 tsp cumin
4.5 - 5.5 qt water

CHICKEN POZOLE RECIPE
INGREDIENTS
4 to 4 1/2 Liters of water (18 cups water)
3 to 4 lbs Pork meat
4 Chile Ancho
5 Chile Guajillo
2 Chile Arbol (optional)
2 bay leaves
Start with 1 tbsp Kosher salt then adjust salt after Pozole done
1/2 large onion
7 cloves of garlic
4 cups chicken broth (4 cups water and 2 Knorr Chicken bouillion cube)
2 tsp ground cumin
1 tbsp dried Mexican oregano
5 cups White Hominy or (4) 15.5 oz cans (drained and rinsed)
8 Quart Stock Pot

INGREDIENTS
5.75-quart pot with lid
3 1/2 L (14 cups) water
2 lbs (907 g) boneless pork shoulder
1 Tbsp (15 g) salt
2 dried bay leaves
1 to 1 1/2 Tbsp (15 g) chicken bouillon powder
1/2 tsp ground cumin
salt to taste
1lb 13 oz can white hominy (drained and rinsed)
**CHILE PUREE**
5 guajillo chiles (remove stem and seeds)
1 chile ancho (remove stem and seeds)
1 chile de arbol (remove stem and seeds)
1 cup soaking liquid or broth
2 tsp Mexican oregano
5 cloves of garlic
1/4 of a small onion
**GARNISHES
shredded cabbage
onion
cherry radish
fresh lime juice

How to make POZOLE ROJO DE PUERCO ❤ PORK POZOLE
Mexican pozole whether it be a tradition in your home or a first time surprise it is sure to become an instant favorite, the combination of cool and spicy ingredients make it unique in taste for the whole family.
INGREDIENTS
1 lb. pigs feet (cut into pieces)
1 1/2 lb. country style ribs (cubed)
1 & 1/2 lb. pork butt (cubed)
1 medium onion (cut in half)
5 large bay leaves
2 garlic bulbs (all cloves skin removed and ground in molcajete) optional
1 tsp whole cumin (ground in molcajete)
1 tsp peppercorns (ground in molcajete
1 & 1/2 tsp oregano
1 tsp marjoram
red chili sauce (from blender)
salt (to your liking)
3 1lb cans hominy (rinsed well)
Water to cover meat (you decide, don't over do it)
● you can add some chicken bouillon if you wish, that's how my Ron loves it.
RED CHILI SAUCE
5 guajillo chilis
5 ancho chilis
1/4 small onion
2 corn tortillas (cut in pieces)
enough water to blend (or liquid from chilis)
SIDES
shredded cabbage
sliced radishes
chopped onions
chopped cilantro
hot salsa (optional)
fresh lime juice
corn chips
• remove bay leaves before serving
• caution with bones

Constantly skim the top of broth to have a clean and smooth broth
✅the white corn dried hominy can be found at your local Mexican Supermarket or at your local supermarket in the Hispanic aisle.
✅ it is very important for the dried/raw hominy to soak overnight, this helps to soften them I usually soak for 24 hours so it cooks along with the meat ☺️

36 oz organic white corn Posole(uncooked hominy)
Salt
4lbs pork shoulder
2 lbs neck bones
1 whole onion
1 head of garlic
3 bay leaves
25 New Mexico chile pods
3 chile ancho
1/4 onion
3 garlic cloves

2 tsp ground cumin
1 tbsp chicken bouillon

6 Tomatillos (11 oz)
2 poblanos (8 oz)
3 jalapeños (7 oz)
3 TBSP Pumpkin seeds, toasted :

1 whole chicken (6 lb)
2 tsp kosher salt :
3 TBSP avocado oil :
