Today I’m going to be sharing with you how to make the best pozole rojo in an instant pot! Let me tell you this recipe is seriously super easy and it takes less than one hour to enjoy a hot bowl of pozole! For those who like to judge based on the tools I use, let me tell you if my grandma had an Instant pot back in the day, I guarantee you she would use it too!!!! Either way if you are one of those, I already have a recipe on the original way ???? so don’t panic!!! But if you are busy and want it fast then here you go this recipe is for you!!! Now let me tell you, it’s easier to throw in the meat without searing but me personally I find it doing it that way, the meat has no flavor it’s just different! I like to take the extra minutes and sear my meat! A good pozole has to be full of flavor!

Tip: if your Chile pods are normal size( use only 12 mine were on the small size, lately my favorite brand are coming small so I used 15
** I love to use New Mexico Chile pods they are medium heat for me is perfect but if you want your pozole to have no spice, use guajillo ????
Ingredients: I’m using a 8qt instant pot makes 8-10 servings
2-3 lbs pork shoulder
2 lbs pork country style ribs
3 - 25 oz each cans precooked hominy
12-15 New Mexico or guajillo Chile pods
2 Chile ancho or pasilla
Chile árbol (optional)
1/4 white onion
4 garlic cloves
1 tbsp chicken bouillon
1 tbsp oregano
1 tsp whole cumin
1 tsp whole black pepper
2-3 tbsp coarse salt
1 tbsp black pepper
8 cups water

INGREDIENTS
5.75-quart pot with lid
3 1/2 L (14 cups) water
2 lbs (907 g) boneless pork shoulder
1 Tbsp (15 g) salt
2 dried bay leaves
1 to 1 1/2 Tbsp (15 g) chicken bouillon powder
1/2 tsp ground cumin
salt to taste
1lb 13 oz can white hominy (drained and rinsed)
**CHILE PUREE**
5 guajillo chiles (remove stem and seeds)
1 chile ancho (remove stem and seeds)
1 chile de arbol (remove stem and seeds)
1 cup soaking liquid or broth
2 tsp Mexican oregano
5 cloves of garlic
1/4 of a small onion
**GARNISHES
shredded cabbage
onion
cherry radish
fresh lime juice

SMALL PORTION! POZOLE ROJO RECIPE
Today I’m going to show you how to make a small family portion of pozole rojo. It’s so simple you can make it any day of the week and have a little left over to pack for lunch. I hope this recipe brings you and your loved ones the comfort and joy that it brought me while making this for you today ???????? As always friends from my kitchen to yours. ???? Large family size pozole rojo & Salsa Pozolera recipe-
Ingredients
8 cups of water
3 pounds of pork shoulder or pork butt
8 Guajillo chiles
1 onion
8 garlic cloves
8 bay leaves
1 tsp of salt
3 Tbsp chicken bouillon
1/2 Tbsp Mexican oregano (1 Tbsp if you love it as much as I do)
5 cups of hominy or Two small cans of hominy
Salsa Pozolera
5 chiles puya or 8 chiles de árbol
6 to 8 garlic cloves
3/4 cup of broth
1 Tbsp salt
Table cream for tostadas
1 cup of heavy whipping cream or table cream
Salt and pepper to taste
Tostadas
Toppings- chopped cabbage or lettuce, red radish, white onion, cilantro, lime, salsa pooler
Tip❣️ Best flavors pull through when you use bone-in pork
If you have some leftovers put them in a freezer bag (it lasts 3 months) make sure to remove the onion as it will make it sweeter when reheated.
Step by Steph suggestion
1. Bring 8 cups of water to a boil with 1 tsp salt
2. Add 3 pounds of pork and boil on a high heat for 10 to 15 minutes
3. In the meantime blend the chiles that have been soaking in hot water for 10 minutes
4. Remove impurities
5. Time to add the Sazón ???????? place the onion, garlic, bay leaves, chicken bouillon, and strain blended chiles into the boiling pot
6. Continue to boil on a medium heat for 30 minutes
7. After 30 minutes, add rinsed canned hominy, Mexican oregano, and the best practice tip of Fresh corn masa blend to the aromatic pot of pozole
8. Continue to cook on a medium heat for 45 minutes or until pork is juicy and tender
9. Time to serve and enjoy with your loved one, Buen provecho- Enjoy!

Constantly skim the top of broth to have a clean and smooth broth
✅the white corn dried hominy can be found at your local Mexican Supermarket or at your local supermarket in the Hispanic aisle.
✅ it is very important for the dried/raw hominy to soak overnight, this helps to soften them I usually soak for 24 hours so it cooks along with the meat ☺️

Pozole rojo ingredients
2 whole chickens
1 1/2 gallons of water
1 to 2 large cans of hominy ( taste best with 2)
4 to 5 Tbsp salt or chicken bouillon (adjust to taste)
20 bay leaves
2 to 3 Tbsp of Mexican oregano
2 onions
2 garlic bulbs
1 sprig of rosemary (optional) or 1/2 Tsp and cook throughout : )
30 guajillo chiles
Instant corn masa (maseca) + pozole broth combine until smooth
Toppings- shredded cabbage or iceberg lettuce, onion, cilantro, red radishes, lime, and spice of choice
Side- tostadas with Mexican table cream w/ black pepper or you can use half & half with a little salt and pepper
