1 1/4 c Olive oil 8 Chilli peppers with Tops removed 1 Bay leaf 1 Small piece lemon rind Pour the oil into a small, screw-top jar and add the chilli peppers, bay leaf and lemon rind. Screw on the top and shake. Leave to stand in a warm place for at least 24 hours before use. It will keep at room temperature indefinitely. Ready made piri-piri can be bought by the portuguese, who use it a good deal as a spicy condiment on pasta, fish or meat and also to flavour stews. Portuguese Piri Piri Chicken Recipe
Portuguese Piri Piri Chicken Recipe
chicken drumsticks, olive oil, Surinamese pepper, paprika powder, garlic, oregano, black pepper, chili powder, chili flakes, juice of 1 lemon, mineral salt, marinade
- 1 chicken, cut in half and the back removed - 1 white onion, diced - 3 cloves garlic - 2 birds eye chilis - 1 tsp smoked paprika - 2 tsp oregano - 1 tbsp red wine vinegar - juice of a lemon - 1 tsp salt - 1 tbsp hot honey
Method
1. Blend everything (except the chicken…) 2. Rub all over the chicken and leave to marinade for 2 hours in the fridge. 3. To cook, you can place it in a hot oven (250-300c) like I did or grill it on the BBQ, either way I think you really want to have good char on this one so don't hold back. In the oven it will only take about 25-30 minutes but I suggest you use a temperature probe because you are looking for an internal temp of 70c at the thickest part before you take it out of the oven. 4. Make sure you rest the chicken for at least 10 minutes. 5. Serve with some spicy rice and a salad and enjoy!

Portuguese cooking is thought to be simple and straightforward. I've found the Portuguese recipes are actually more complex than they may seem on the surface and of course all made with love and passion from the warmest people I have ever known.
This sauce is zingy with a little heat and can be easily adapted with extra red chilies to turn up the heat dial. Enjoy with fish, soup, or pretty much anything which is edible :-)
