How To make Ziti with Fresh Tomato Olive Sauce
8 oz Ziti or mostaccioli pasta
2 tb Olive oil
2 tb Balsamic vinegar
4 Cloves garlic, minced
1/3 c Thinly sliced fresh basil
1/2 c Pitted kalamata olives -OR-
4 oz Cn sliced & pitted black
-Olives, drained 1 ts Drained capers, optional
1/2 ts Crushed red pepper flakes
4 lg Tomatoes, halved crosswise
4 oz Goat cheese crumbled or
1/4 c Parmesan cheese
Salt & pepper to taste Cook pasta according to package directions. Meanwhile in a large serving bowl, combine the oil, vinegar, garlic, basil, olives, capers and red pepper flakes. Place a strainer over the serving bowl; squeeze the juice from the tomato halves into strainer. (Push on seeds with back of a wooden spoon to extract tomato liquid.) Discard the seeds. Coarsely chop tomatoes and add to olive mixture; toss well. Drain pasta and add to the bowl; toss well. Sprinkle with cheese if desired. Season with salt and pepper to taste. -----

Baked Ziti Recipe
1 lb Italian Sausage
3/4 pound ground beef
1 box of ziti or penne noodles
1 green and red bell pepper diced
1 onion diced
1/ 4 cup of mushrooms diced
4 cloves of garlic minced
Salt
Pepper
Garlic powder
Onion powder
Italian seasoning
15 oz of ricotta cheese
2 eggs
1/4 cup of Parmesan cheese
2 1/2 to 3 cups of Mozzarella Cheese
14 oz can of diced tomatoes
32 oz of pasta sauce or marinara
Preheat the oven to 350
Add about a tablespoon of olive oil to a pot and Salute your diced onions, bell peppers and mushrooms for about 5 minutes then add in the garlic and cook for about a minute until fragrant.
In the same pot brown the Italian sausage and ground beef. Seasoning it with salt, pepper and Italian seasoning.
Boil the ziti noodles in salted water per package instructions.
Drain the excess grease from the meat then pour in diced tomatoes and the pasta sauce. Season to taste with salt, pepper, Italian seasoning, garlic and onion powder. You can add a little sugar to cut the acidity of the sauce if you want.
In a large bowl mix together the ricotta cheese, eggs, parsley, Parmesan and mozzarella cheese,
Mix in the ziti noodles then about 1 1/2 cup for the sauce.
Coat the bottom of a baking dish with the meat sauce top that with cheese. You can add a little bit of cheese on top of the noodle if you want. Repeat these steps ending with the sauce at the top. Spread the Mozzarella cheese on top of the sauce and bake for 20-25 minutes. Let rest for 5 to 10 minutes and enjoy!

Baked Ziti With Chef Karen | Quarantine Cooking
Karen Akunowicz, chef & owner of Fox & the Knife in Boston, makes a classic Italian-American comfort food: Baked Ziti. Karen starts by making a tomato sauce with garlic, olive oil, San Marzano tomatoes, and fresh basil. She then cooks penne to al dente perfection before tossing them in a blend of mozzarella, ricotta, and breadcrumbs. The pasta mixture gets layered into a casserole dish, along with the tomato sauce, and is topped with extra cheese and lots of fresh parsley before baking in the oven. The result is a cheesy, comforting dish that’s perfect for feeding a family, or just a very hungry individual!
