Pasta gratin with sweet Gorgonzola and thyme
EASY RECIPE
SERVES 6
INGREDIENTS
380 g macaroni or short pasta
250 g SWEET GORGONZOLA
40 g 00 flour
60 g butter
800 ml milk
60 g grated parmesan cheese + 1 pinch for the gratin
Salt
Black pepper
Thyme
Cook the pasta in abundant salted water according to the packet instructions.
Drain and season with a drizzle of olive oil and set aside.
Meanwhile prepare the cheese sauce.
In a saucepan melt the butter, add the flour and let it toast while stirring.
Add gradually the warm milk and bring to the boil.
Add the pieces of SWEET GORGONZOLA, parmesan, fresh thyme and season with salt and pepper.
Add the sauce to the pasta, stir well and put it in a buttered oven pan.
Flatten out, sprinkle some parmesan, more thyme and leave 20 minutes in the oven at 200°.
Take out and let rest 10 minutes before serving.

Steak:
2x 9oz/250g Steaks of choice, at room temp (see notes)
1 heaped tbsp Unsalted Butter
2 sprigs of Fresh Thyme
2 sprigs of Fresh Rosemary
2 cloves of Garlic, left in skins & gently crushed with the palm of your hand
Olive Oil, as needed
Salt & Black Pepper
Blue Cheese Sauce:
1 cup / 250ml Heavy/Double Cream, at room temp
1/2 cup / 125ml Beef Stock
3.5oz / 100g Blue Cheese, crumbled (see notes)
1 heaped tbsp finely diced Fresh Chives

Ensure you take your steaks out the fridge 30mins before needed. Pat dry with papers towels, then sprinkle with a heavy seasoning of salt and pepper on each side. Rub into the meat, then coat with a drizzle of olive oil.
Bring a heavy bottom pan to the highest heat it can go. Once it's smoking hot (literally) lay down your steaks. For medium rare with a steak approx 2cm thick fry for 2 mins, or until the sighting of blood emerges through the upper surface. Then flip.
Add in your butter, rosemary, thyme & garlic and baste the steaks for another 2mins. Remove steaks from pan & leave to rest (important). Leave herbs and garlic in the pan.
Lower heat to a medium and pour in beef stock. Scrape off any flavour from the pan, then pour in cream. Give it a good stir and allow to simmer for 5 or so mins until it begins to thicken. Remove herbs and garlic, then add in blue cheese and chives.
Continue simmering until cheese has blended and the sauce has thickened. The stock, cheese and steak itself all taste fairly salty, so it's unlikely you'll need to season with salt, but a good pinch of black pepper is recommended.
Serve over steak and enjoy!

15 Minute Fresh Cherry Tomato Pasta

15-minute Cherry Tomato Pasta
1 lb pasta of choice
3-4 garlic cloves, thinly sliced
¼ cup extra virgin olive oil
2 pints cherry tomatoes
6-7 leaves fresh basil, thinly sliced
1 tsp black pepper
Salt to taste
¼ cup fresh parmesan cheese (add more if you like)
Pasta water as needed
Bring a large pot of water to a boil seasoned with salt.
In a large skillet pour the olive oil and add in the thinly sliced garlic.
Turn the heat to medium heat and let the garlic infuse with the oil until golden brown, this should take about 3-4 minutes.
At this point you can cook the pasta when water is at a boil, so it will be ready at the same time as the sauce. Cook the pasta shy 2 minutes of al dente as per package directions.
Add in the whole cherry tomatoes and stir them around until they soften and start to burst. You can use a wooden spoon to help with this until it reaches a saucy consistency, this takes about 7-8 minutes.
Add in fresh basil. Season with pepper and salt.
Drain pasta (but reserve the water) and add it in to the skillet. Pour in about ½ cup of the pasta water and stir.
Keep stirring the pasta around the skillet for about 2 minutes.
Adjust for seasoning and pasta water, and add parmesan cheese as you like.
