3 pounds of pork meat
2 carrots
1 union
1 red bell pepper
3 chiles anchos
3 chiles de árbol
3 chiles california
3 chiles guajillo
1 tbsp of cumin
1 tbsp black pepper
1 tbsp of cinnamon
1 tbsp of Mexican oregano
2 tbsp of salt
2 bay leaves
3 tbsp of vegetable oil
3 garlic cloves

Ingredients:
2 tablespoons Oil
1 Onion, chopped
2 Garlic cloves, minced
1 lb. (450g) Ground beef
1 teaspoon Paprika
1 teaspoon Oregano
1 teaspoon Cumin
1/2 teaspoon Red chili flakes (optional)
Salt to taste
Pepper to taste
2 tablespoons Tomato paste
1/4 cup (60ml) beef stock/water
4-5 Flour tortillas
2 tablespoons Cooked Rice per tortilla
Corn
Beans
Lettuce, chopped
Tomato, chopped
Cheese of your choice
Directions:
1. Make the meat mixture: in a large pan, heat 2 tablespoons of oil over medium heat. Add chopped onion and sauté until golden, about 5-6 minutes. Add minced garlic and cook for one minute. Turn the heat to high, add ground beef and cook, breaking it apart until no longer pink, about 5 minutes. Add the spices, tomato paste and mix well. Add beef stock/water and cook for 3-4 minutes. Remove from heat and set aside.
2. Assembly: place the tortilla on a clean working surface, first layer 2 tablespoons of rice, then 3-4 tablespoons of the meat mixture, then 1-2 teaspoons of corn, 1-2 teaspoons of beans, chopped lettuce, chopped tomato and grated cheese of your choice. Fold the sides of the tortilla and roll as shown in the video.
3. Toast the burritos in a dry pan over high from all sides until golden.
4. Serve and enjoy!

Green Chile Burritos with Pork:
Pork Carnitas ???? (tacos and burritos): 5-6 pound pork roast
2 tablespoons olive oil
2 tablespoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon dried oregano
2 teaspoons ground cumin
1 yellow onion, sliced thin
1 cinnamon stick
4 large cloves garlic, minced
2/3 cup orange juice or orange soda
1. Rinse and pat dry the pork roast. Stir together the olive oil, salt, pepper, oregano, and cumin. Rub the spice mixture all over the pork roast. Place the roast in the slow cooker with the fat cap facing up. Place the onions and the garlic over the roast. Pour the orange juice over the roast.
2. Cover with lid and cook on LOW for 9-11 hours, until tender and falling apart. (If the fat cap is still intact over the roast, pull the biggest pieces of it off and discard.) Carefully pull apart the roast, leaving plenty of bite-size chunks of meat. (Try not to shred it to tiny pieces.) Use a slotted spoon, spatula, or tongs to lift the meat out of the slow-cooker. **(Recipe seen on the Food Network’s show The Kitchen.) We use the meat to make burritos last night and tacos for the kids. However, the carnitas would have been amazing alone over rice.
