How To make Poor Man's Perogies
1 pk Lasagna noodles
1 1/2 c Margarine or butter
4 ea Onions, diced
11 ea Medium potatoes
1 lb Velvetta
1 x Parmesan cheese, grated
Saute 1 1/2 sticks of margarine and the diced onions until tender. Cook lasagna noodles as directed on the package. Boil potatoes until tender as for mashed potatoes. Cube cheese. After potatoes are cooked, add cheese and remaining margarine (no milk!) and mash like making mashed potatoes. In a 9 x 13 pan, layer: 1/3 of onions on bottom, layer of noodles, 1/3 of potatoes. Repeat layers ending with mashed potatoes. Top with parmesan cheese and pepper. Bake at 350~F for 30 - 35 minutes. Cut into squares and serve. Join us while Eva & Sonya teach us how to make Glums Wareniki, also known as Mennonite Perogies. This is part of our Cultural Cooking project during Lacombe Culture and Harvest Festival, September 25-27.
Filling:
2 c. fresh dry cottage cheese
2 egg yolks
Pinch of salt
Dash of pepper
Dough:
2 c. milk
6 egg whites,
2 tsp. salt
Enough flour to make a firm dough, start with about 6 cups and then add as necessary. Can do it two batches rather than one big batch.
Roll dough out thin and cut into squares. Fill with cottage cheese mixture. Press together to form triangles. Put into boiling water and boil for 5 minutes.
Sauce:
2 c. heavy cream
1 c. sour cream (can use greek yogurt)
Once served, can be sprinkle with salt & pepper, or sugar, or ketchup.

Here is how to prepare:

1. Sauerkraut and mushroom pierogi
- Soak dried mushrooms overnight or at least 4 hours. If you can't get a Polish blend of mushrooms, you can substitute with shitake mushrooms - also soak for at least 4 hours.
- After soaking, boil mushrooms in enough water to cover on low heat for about 20 minutes. Drain, but reserve the water from boiling. Cool and mince - set aside until cook-along.
- Mince portobello or button mushrooms - set aside until our cook-along.
- Mince onion - set aside until our cook-along.
- Prepare vegetable broth.
- Measure out the rest of the ingredients and set aside until our cook-along.
Equipment needed:
- a large frying pan
- a sharp knife
- a spatula
- a mixer with a hook attachment or a large bowl
- clean surface for rolling out dough
- a rolling pin
- a pierogi cutter (glass or empty can will do)
- a small spoon
- a large pot filled with water
- a slotted spoon
- a large tray/plate for cooked pierogi
2. Potato, farmer's cheese and onions pierogi
- Peel, boil and cool potatoes.
- Mince the onion and sauté in butter until golden brown. Set aside until our cook-along.
- Measure out the rest of the ingredients and set aside until our cook-along.
Equipment needed:
- a large bowl for mixing filling
- a potato masher or a fork
- a sharp knife
- a spatula
- a mixer with a hook attachment or a large bowl
- clean surface for rolling out dough
- a rolling pin
- a pierogi cutter (glass or empty can will do)
- a small spoon
- a large pot filled with water
- a slotted spoon
- a large tray/plate for cooked pierogi
3. Apple cake
- Peel and core apples. Grate on the largest side of a vegetable grater and place in a deep frying pan. Add sugar, zest, and lemon juice and cook on medium until all juice evaporates (about 30 minutes). Set aside to cool.
- Measure out the rest of the ingredients and set aside until our cook-along.
Equipment needed:
- a large bowl
- a 9 x 9 inch / 23 x 23 cm baking dish
- an oven
- parchment paper
- rolling pin
- spatula
- a fork
- pastry brush
- a knife

* 2 lbs frozen cheddar pierogies
* 1 (15 ounce) jar alfredo sauce
* Crispy bacon chopped
* 1 cup shredded mozzarella
* 1 cup shredded cheddar
* Roasted red peppers
* Tomatoes
* Bread crumbs
