•1egg
•50g sugar
•60ml vegetable oil
•120ml milk
•1tbsp unsweetened cocoa
•1tbsp orange peel
•8g baking powder
•150g flour

This spiced raisin cake is our take on the famous treat during the Great Depression during the 1930s. Our poor man's cake with cinnamon, cloves, and nutmeg is topped with whipped cream made with pineapples for added flavor and sweetness.

Ingredients:
3 cups all-purpose flour
3 cups water
1½ cups raisins
1 cup brown sugar
½ cup shortening
2 tsp ground cinnamon
2 tsp baking powder
1 tsp ground cloves
1 tsp ground nutmeg
1 tsp baking soda
¼ tsp salt
Whipped topping:
1-12 oz can crushed pineapples, drained & save the liquid
1½ cups shortening, preferably Crisco
1½ cups powdered sugar
1 cup water
1½ tbsp cornstarch
1½ tsp vanilla

0:10 In a saucepot, combine the water, raisins, sugar, shortening, cinnamon, cloves, and nutmeg.
0:33 Bring mixture to a boil, then reduce to a simmer. Continue simmering until the raisins have rehydrated and the sugar and spices have dissolved roughly 5 to 8 minutes. Stir occasionally. Set aside to cool completely at room temperature.
0:49 While waiting, preheat your oven to 375 degrees F. Grease a bundt pan with cooking spray.
0:52 In a large mixing bowl, sift together your flour, baking powder, baking soda, and salt.
1:04 Add the cooled syrup into your sifted flour mixture. Fold until evenly incorporated.
1:16 Pour into your greased bundt pan, then bake until a cake tester comes out clean for roughly 45 minutes.
1:27 Once baked, set aside at room temperature for 15 minutes. Flip over to release the cake while still warm. Cool completely at room temperature.
Whipped topping:
1:37 Dissolve cornstarch in water then pour into a small saucepot. Bring this to a simmer until slightly thickened, no more than 5 minutes. Set aside to cool down completely.
2:00 In a mixing bowl attached to a hand beater, combine the rest of the ingredients. Whip until mixture turns pale and light, roughly 5 to 8 minutes.
2:22 Reduce the speed of your beater to low. Gradually drizzle your cornstarch slurry at the side of the bowl. Continue whipping until evenly incorporated.
2:27 Spread the topping to decorate your cake. Portion accordingly and serve.

Canadian War Cake OR Depression Cake OR Hoover Cake Or Eggless, Butterless, Milkless Cake... Whatever name you use for this cake recipe it was born out of the hard times of war, and then used through the dark years of the depression. In the end this is a vegan raisin spice cake that we found in the 1939 Elmvale Community Cook Book.
Ingredients:
500 mL (2 cups) raisins
250 mL (1 cup) sugar
30 mL (2 Tbsp) vegetable shortening
5 mL (1 tsp) ground cinnamon
2 mL (½ tsp) ground cloves
250 mL (1 cup) water
5 mL (1 tsp) baking soda
375 mL (1½ cups) all purpose flour
Method:
Place raisins, sugar, cinnamon, cloves, and water in a small pot and bring to a boil.
Boil for 5 minutes and then remove from the heat and let cook to room temp.
Preheat oven to 180ºC (350ºF).
Mix baking soda and flour into the raisin mixture until fully combined.
Pour into a greased and floured 8x8” baking pan.
Bake for 30 minutes or until cake tester comes out clean.
