1 c Sugar 1/4 ts Cloves 2 c Raisins 1 x Pinch Of Salt 1 c Lard * 1 ts Cinnamon (Or To Taste) 1/4 ts Allspice * The original recipe calls for Lard. I don't know if shortening will ~-------------------------------------------------------------------------- Boil together all ingredients. Add water just enough water to cover raisins. Boil until raisins are tender. Cool. Add 1 t baking soda and enough Unbleached flour to make a stiff batter. Pour batter into 9-inch round cake pan. Bake in moderate oven until cake springs back when touched lightly (about 1 hour at 350 degrees F). Serve warm or cold with cream, custard sauce or powdered sugar frosting. Walnuts may be added to batter just before baking. -----

My mom grew up during the Great Depression. She loved to bake. She baked throughout her entire life up until a month before she died at the age of 93. This is a very old recipe for a Quick Coffee Cake that goes all the way back to the hard times of the Great Depression. The ingredients are simple and cheap. This cake can be made today for less than two dollars. It cost us about $1.35 to make.

Poor Man's Cake – Hard Times Recipe Poor Man's Cake – No Eggs, No Butter, No Milk. This recipe was born in terribly hard times. It is a struggle food masterpiece. It has its own unique taste and texture. The closest thing I can compare it to is raisin bread, but not really. This is a recipe that you really must try.
I love the basic recipe with nothing added. The cream cheese frosting makes it much richer and sweeter. The chopped nuts really add a nice flavor, and the cranberries change both the flavor and texture. The muffins have a slightly different texture and make an excellent breakfast muffin. This would be the perfect end to a Sunday dinner. If you are looking for something different to take to your next church dinner or potluck you have found it.

Ingredients:
1 ½ cups (7 or 8 ounces) Raisins 1cup + 1 tablespoon Water, divided. 1 tablespoon Shortening 1 cup Sugar Brown ½ teaspoon Cinnamon ½ teaspoon Cloves ½ teaspoon Salt 1 ½ cups Flour ½ teaspoon Baking Soda Options: ½ cup Chopped Nuts ½ teaspoon Ginger ½ teaspoon Nutmeg Cranberries to replace Raisins
Bake in an 8 x 8 pan or 12 muffins Double for a 9 x 13 pan
