How To make Pon Pon Shredded Chicken
PON PON SHREDDED CHICKEN:
3 c Stock (or water)
3 Or 4 chicken breasts *
2 Bean paste sheets (or wide
-carrot or cucumber strips) SEASONING:
2 tb Peanut butter
1 ts Sesame oil
1/2 ts Light soy sauce
1/2 ts Red pepper oil
SAUCE:
1/2 ts Sugar
1/2 ts Sesame oil
1/4 ts Salt
* (to produce approximately 1 1/2 cups of shredded chicken) 1. Mix well, separately, seasoning and sauce ingredients.
2. Bring stock (or salted water) to the boil, immerse chicken
breasts and turn off flame. Soak until cooled, then shred into strips. (Alternatively, for authentic and finer texture, cover breasts with a clean cloth and shred by hitting them with a mallet++hence the sound of ponpon.) 3. Lay bean paste sheets in a suitable flat container, and blanch in
hot water for 1 to 2 minutes. Remove and rinse under cold running water. Drain and cut into finger-sized strips and mix with sauce mixture. 4. Spoon into serving dish, pile shredded chicken on top and pour

Ghee Rice
Ingredients
1 cup basmati rice
4 tbsp ghee
1 onion thinly sliced
1 piece of cinnamon
2 cloves
1 cardamom
¼ tbsp fennel seed
1 star anise
1 bay leaves
8 cashew pieces
15 raisin pieces
2 tbsp thinly sliced fried onions
Salt & pepper to taste
Instructions:
1. Soak Basmati rice for 15 minutes to half an hour (this step is optional). Wash and drain the rice and keep aside.
2. Heat 1 tbsp ghee in the pan and add cashews and raisins, saute until cashews are lightly brown and raisins become plump. Drain and keep aside.
3. Add more ghee and then add fennel seeds, cinnamon, bay leaves, cardamom, cloves and star anise. Sauté for 2-3 minutes.
4. Add onions and sauté until translucent.
5. Add the drained rice to the pan and stir fry for few minutes until the rice begins to change color.
6. Add water to the pan along with salt and mix well. Bring it to a boil.
7. Reduce heat to medium low and cover the pan with a tight lid. Cook for around 10 minutes until the rice is cooked and all water has been absorbed.
8. Switch off the stove and keep the rice covered for another 10 minutes.
9. Garnish the rice with fried onions, cashews and raisins.
Malabar Chicken Curry
Ingredients
1 whole chicken with bones
1/4 cup sliced onions or shallots
1 tbsp red chili powder
1 tbsp coriander powder
1 piece of ginger
3 garlic pods
1/4 coconut shell grated
1 big onion sliced thin
1 green onions
2 chopped tomatoes
1/2 tbsp turmeric powder
few curry leaves
few coriander leaves
salt & pepper to taste
coconut oil
Instructions:
1. Pour ½ tsp coconut oil into a fry pan and add shallots or onions, curry leaves, ginger and garlic and saute.
2. Add grated coconut meat, mix well. Fry it till the coconut becomes golden brown. Add all the powders given and saute for a minute.
3. Let it cool for some time. Add enough water to the cooled coconut mixture and grind to a smooth paste. This is a masala paste.
4. Heat oil in a pan and add thinly sliced onion, curry leaves, salt and green chili.
5. When onion is fried well add tomato.
6. When tomato is soft, add the ground paste to this and mix well. Add cleaned chicken pieces to this combine well and add enough water for the chicken to cook.
7. Cover and cook in low flame and stir in between and cook until the chicken is done.
8. Garnish with coriander leave.
