Pinto Bean Squash Stew - NY Spice Shop - Pinto Beans
Ingredients
1 cup dried pinto beans, soaked overnight in cold water & drained
10 rashers smoked streaky bacon
2 red onions, quartered
2 sprigs of fresh oregano
4 cups water
2 cups passata
1 cup light brown sugar
2tbsp American mustard
2tbsp molasses
1 bay leaf
2 tsp. ground cumin
2 tsp. smoked paprika
Salt & black pepper
4 baked sweet potatoes
• Place your beans into a large saucepan and add the bacon, onions, oregano, water,
passata, sugar, mustard, molasses, bay leaf, and spices. Bring the beans up to a rolling boil,
and let boil on high for 10 minutes before reducing to a simmer. Cook, stirring occasionally,
until beans are tender, 1 to 2 hours, depending on how long the beans were soaked.
• When beans are tender season with salt and black pepper to taste and serve over baked
sweet potatoes.

???? SOUP INGREDIENTS
1 tablespoon olive oil
1 large onion chopped
2 garlic cloves minced
1 large carrot chopped
1 celery rib chopped
6 cups vegetable broth
1 teaspoon dried thyme
½ teaspoon oregano
1 teaspoon kosher salt
½ teaspoon black pepper
3 15-ounces canned white beans drained and rinsed
2 cups baby spinach
Fresh parsley for serving
Grated parmesan cheese for serving
INSTRUCTIONS
1. In a large pot or saucepan, heat olive over medium high heat. Add onions and garlic; cook until onions are translucent, and garlic is fragrant, about 2-3 minutes, while stirring regularly. Add in the carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes.
2. Add vegetable broth and beans, bring to a boil, reduce heat and simmer for 15 minutes to combine all of the flavors together.
3. Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes
4. Remove from heat, sprinkle fresh parsley and grated parmesan cheese, if desired, and serve immediately.

✿ Veganlovlie Recipes / Beans and Butternut Squash Daube - Vegan Stew : This is a Mauritian classic stew originating from the French daube provençale. While the French version calls for wine in the sauce, the Mauritian daube is made with tomatoes, herbs and spices. Curry leaves give this stew its distinctive taste but you may replace them by 1-2 bay leaves if you can't find curry leaves.
This stew can be made with various vegetables and today I am using fresh borlotti beans, butternut squash and potatoes.
