Ingredients:
1-15 oz can red kidney beans, drained & rinsed
1-15 oz can pinto beans, drained and rinsed
7 oz cucumbers, peeled, seeded, and chopped
4 oz bell peppers of your choice, preferably a mix of colors & chopped
1½ oz red onion, finely chopped
¼ cup parsley, finely chopped
3 tbsps balsamic vinegar
2 tbsps pitted & sliced olives of your choice, preferably cured
2 tbsp feta cheese, crumbled
2 tbsps pine nuts, roasted
1½ tbsps olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp honey
salt & ground black pepper to taste

0:06 In a small bowl, make the dressing by whisking together both kinds of vinegar, olive oil, mustard, and honey.
0:38 Season with salt and pepper. Adjust accordingly. Whisk until emulsified and set aside.
0:57 In a large salad bowl, combine both beans, cucumbers, bell peppers, onions, parsley, olives, feta cheese, and pine nuts.
1:39 Drizzle dressing on the salad and toss well. Adjust seasoning as needed and serve.

4 to 5 large Beets /cooked until tender
5 oz of Greek or Bulgarian Feta Cheese / crumbled - or as much as you like, more or less.
1 to 2 small Persian Cucumbers / or 1 medium - seeds removed
1/2 cup fresh Dill / coarsely chopped
1/3 cup to 1/2 cup Pine Nuts / roasted lightly - more less up to you
1 tsp. Salt / for cooking the Beets
1 to 2 tsp. Olive Oil / for toasting the Pine Nuts
Enough water to cover the Beets /more if needed
Dressing ...
1 tsp. Date Molasses
1 to 2 tsp. Pomegranate
2 to 3 cloves of Garlic / chopped
3 Tbsp. Olive Oil / fine quality
1/2 tsp. Salt / to taste
2 to 3 Tsp. of freshly squeezed Lemon Juice / plus the zest of the whole Lemon - more less up you

Superfood Arugula Salad with Pomegranate, Pine Nuts and Tomatoes
A Greek salad doesn’t always have to be the classic Greek recipe for one! It should be seasonal and this winter salad is both light and bright, a perfect example of the green Mediterranean diet, packed with superfoods and drizzled with delicious extra virgin Greek olive oil.
2 to 4 servings
4 cups baby or wild arugula
1 cup teardrop or cherry tomatoes, halved
4 tablespoons pine nuts, toasted
Arils of ½ a pomegranate
3 tablespoons fresh orange juice
1 teaspoon Dijon or other mustard
2 tablespoons balsamic
Greek sea salt to taste
8 tablespoons extra virgin Greek olive oil
Place the arugula in a mixing bowl. Add the tomato halves.
Whisk all the ingredients for the dressing.
Sprinkle toasted pine nuts over salad. Add and toss the dressing.
Serve.
