Spinach and Pine Nuts

2 Tablespoons pine nuts - toasted
CORRECTION: 2 cloves garlic - chopped; NOT 2 Tablespoons
4 cups fresh spinach
4 - 6 turns of black pepper
1/4 teaspoon or less of salt

Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.
I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

INGREDIENTS:
100 g Fresh Baby Spinach
100 g Mangetout
Fresh Basil
100 g Kale
Pine Nuts
3 tbsp Olive Oil
2 tbsp Balsamic Vinegar
1 tsp Wholegrain Mustard
Salt and Pepper
Orange Juice and Zest
STEP 1: MIX INGREDIENTS IN A BOWL
Put Spinach, Mangetout, fresh basil and kale in to a bowl. Finely cut up a shallot, add it and mix everything together.
STEP 2: TOAST PINE NUTS
Put the pine nuts into a pan and toast for a minute or 2. Put these to the side ready to use to serve.
STEP 3: MAKE DRESSING
For the dressing add the Olive Oil, Balsamic Vinegar, Wholegrain mustard, salt and pepper, grated Orange Zest of a whole orange and fresh orange juice and give it a good mix.
STEP 4: FINISH AND SERVE
Pour the dressing over the bowl of spinach and mix up, top with pine nuts and you are ready to serve and enjoy.
How to create a good salad dressing with pine nuts? raw recipe
Soak raw pine nuts overnight in water.
The following day, remove the soaking water then blend the pine nuts with a bit of water, one or two cloves of garlic and a pinch of sea salt.
This creamy salad dressing is perfect with vegan noodles made of cucumbers or zucchinis.
I love olive oil, or liquid gold, but sometimes it is nice to add a bit of variety :-)
