2 c Pine nuts 2 tb Butter 1/2 l Alphabet pasta 1/2 c Parsley; minced 1/3 c Green bell pepper; chopped 1/3 c Red bell pepper; chopped 1/4 c Fresh lemon juice 1/4 c Olive oil Freshly ground pepper Parmesan cheese; to taste In a large skillet, lightly toast the pine nuts in the butter; drain on paper towels and cool. Cook the alphabet pasta in boiling water; drain and rinse in cold water. (Be extra careful not to overcook the pasta.) Very gently, mix together all ingredients; cover and chill.

Spinach Pine Nut Pesto Pasta Salad | Funky Fresh Food
Whenever I've got some friends or family coming over for lunch, I'll pop to the shops and buy a few special bits and pieces to make the lunch that little bit special. One of my guilty buys in these occasions has to be the spinach and pine nut pasta pots. However the time has now come for me to stop being lazy and make it for myself. After some rigourous testing, my take on this guilty pleasure is even tastier and takes just 20 minutes! You can make as much or as little as you fancy, but a great big bowl of this will go down a treat at any buffet or BBQ.
Ingredients: 200g farfalle pasta 50g parmesan or pecorino romano 75g pine nuts 50g baby spinach leaves 25g basil leaves 5tbsp olive oil 1 garlic clove
Method: Cook pasta according to packet's instructions. To make the pesto, place parmesan, garlic, basil, olive oil and 50g of the pine nuts into a food processor and blitz until you have a rough paste. Drain pasta, then mix through pesto and spinach. Dry fry the remaining pine nuts in a frying pan over a medium high heat for a couple of minutes until lightly toasted. Top the pasta with the toasted pine nuts and serve. Enjoyed warm and cold.
